- Brad makes a 1-hour weeknight dinner with a one pan cast iron coconut creamy and crispy chicken seared in pork fat (olive oil a strong substitute) with sungold tomatoes, green bell peppers, garden grown leaks (onions), dill seeds, baby corn, red potatoes vegetable party! Hi Brad, great video! I made a variation of this recipe today and it turned out really well. I had some lemongrass marinated chicken I was planning on grilling but this video came out and I decided to try it. Didn't have leeks but I used some celery and onion. The recipe is very Thai curry inspired and delicious. Thanks for the inspiration!

I find that chicken skin can get to tasting pretty gnarly with that much color. Usually I prefer a very light golden skin.

So 1 hour dinner but season day before. Got it... so a 25 hour dinner. Looks great.
I started with a Gozney Roccbox. Then they came out with the Arc XL. I've done steaks and pizza. Sadly, the Roccbox was only used about 6 times. Now stored away, unused. The Arc XL is awesome.

I think this might be the first time that I have ever heard someone say they like green bell peppers.
Seriously. I think, like so many foods, people say they don't like it because they only have had bad. Once you serve them good, they realize what they are missing. Most green peppers in the supermarket are revolting. Home grown or farm grown are the essence of vegetal. Yum.
@@zizzie4081 As far as I can recall, the only time I have ever used a green bell pepper was in a meat sauce where I incorporated a lot of carrots and sweet paprika, it brought a nice bitter counter to all the sweetness that the carrots and paprika brought to the dish. Other than that, I've only used yellow/orange/red bell peppers in the food I cook.
