    CAST IRON SKILLET CHICKEN RECIPE
    4 bone-in, skin-on, chicken thighs (about 6 ounces each)
    2 teaspoon coconut oil
    kosher salt and pepper
    garlic powder (optional)
    smoked paprika (optional)
    Preheat oven to 425ºF.
    Pat chicken dry with some paper towels to absorb excess moisture.
    Season skin side generously with salt and pepper. Flip and season the meat with salt and pepper and any additional spices you like (if you decide to stick to salt and pepper, your chicken will still be delicious).
    Heat cast iron skillet over a medium heat. Add coconut oil to coat the bottom of the pan (if you have excess oil in the pan, carefully wipe it out with a paper towel).
    Once the oil is hot, place chicken skin side down in the pan and set your timer for 6 minutes. You want to brown the skin to a golden brown color. The chicken will easily release from the pan when it is done.
    Flip the chicken and pop into the oven for 20-25 minutes or until it reaches an internal temperature of 165ºF.
    Serve an enjoy!

      How so you clean your skillet? Can never seem to ge5 it clean enough between meals, especially with a chicken meal with spices...we use oil and not soap like you're supposed to but cannot get skillet clean like yours. Help please! Ps, love your videos!

    I love this recipe I even do it with chicken breast ! I just add about two tbsp of water ( you can even use chicken broth) right before I throw the pan into the oven. I bake the chicken breast at pre heated 375 instead for about 10-15 mins. It’s moist and not over cooked. Love this technique thank you so much for teaching it to me !!

    I love my cast iron skillets. They account for about 90% of my cooking. This sounds like a good recipe and a little on the economical side as well since thighs cost less than white meat. I like the idea of that splatter guard. I am going to have to try and find one of those. Your videos are great! Simple and healthy!

      Some of the newer pans have the cast texture in the bottom of the pan, that causes sticking. If you look at your grandmother's pans, they will be smooth as glass. I bought all mine used, with this in mind, but seems like you could smooth it out with some sand paper.

    I have 8 cast iron skillets but since I live in a place with no window near the oven Iv had to use my electric non stick skillet works good but do love my cast iron Lodge!

    I just want to say thank you so much for the tips! This has been a go to method when cooking chicken thighs!! It is absolutely amazing. And afterwards I make a pan gravy with the drippings !! Guys give it a try !!

      @@SincerelyLGS so late I know 😩. But I added chopped onions and a bit of garlic into the residual oil. Let that soften, added a bit of white wine until it reduced. Then I added a little bit of heavy cream until everything mixed well

    10/10, bomb, use the fond left in the pan with a lil flour and spices and water and made a pan sauce to go with, goes crazy

    Unrefined coconut oil has actually a low smoke point 350
    And refined is 400, avocado oil is the best at an amazing 500 degree smoke point!😉
    Also I prefer my internal temp for dark meat~175-180 degrees👍🏾

    Yum! I don't wait til the skillet is "getting hot," (3:01) to add the oil. I add it in the beginning. If one adds the oil even a little past the ambiguous "nice and hot" point, scorched oil will result. I've made that mistake more than once!

    Hi! I fell in love with the recipe when I saw it. I even went to buy my cast iron skillet and cured it before Cooking with it.
    I then followed the seasoning instructions. When I put it in the pan and checked it after 8 minutes, the chicken was still stuck to the pan. So I waited longer and longer thinking that maybe it wasn't ready. But after 15 minutes I turned it around. Most of the skin was still stuck to the pan. What you think I did wrong?

    This looks delicious! But coconut oil isn't a high heat oil. It's smoke point is 350. Avocado oil works great though!

    I will soon be adopting a cast iron skillet that had been my great-grandmother's. One of my kids enjoys cooking but doesn't use cast iron. (where did I go wrong? LOL). Perhaps I have cousin who could pass it on to the next generation.
