I just wanted to say thank you. I live in Florida, I am retired and raising my 3 grandchildren. I started canning as a hobby and never thought that I would have to rely on it for survival. We are stuck with no water or electricity and are now living off the food that I canned. Thank you for the knowledge.

As usual your timing is perfect! I just picked up THREE pumpkins for free. I will paint faces on them for Halloween but then I’ll be roasting seeds, canning pumpkin chunks for purée, and dehydrating pumpkin to powder. 😋. Thanks for the new book, already downloaded. 🙏

Pam I have to say that you looked so vibrant in this video. I paused the video ten minutes in and went over to your bookstore and got the pumpkin powder recipes, I just couldn't wait lol. That pumpkin maple butter might be too dangerous to have in our home hehehe but I like to live dangerously. . .well as dangerously as I can at 65 with osteo arthritis lol. I found your channel nearly a year ago now and I never miss a video now that I'm totally hooked. You really are a very gifted teacher Pam and I've done my fair share of teaching in my life but your knowledge of science and common sense and both yours and Jim's knowledge on food preparedness etc is second to none. You both have done such a nice job, with scientific expolanations where needed (I like that) I am embarrassed to say that the fact that you are a bit older than I am has actually motivated me to do more. So I guess it is good, right? I have a little trouble staying motivated sometimes because I am 67 and alone...no one to feed all this food to. Yet, it I have seen by watching parents and elders, how important it is to continue to cook and process food for myself. Once you stop, you start to get ill and go downhill. I don't plan on having that downhill slide for some time.Thanks for all your hard work!

I don't have a smart TV but my daughter does and she can access anything on her phone apps. just like on your phone it converts your TV screen into the same as your phone. I hope that makes sense. I downloaded the pumpkin book! Yeah! and thank you so much. I noticed that you have some substitutions in your recipes, love love this feature. I was wondering if you don't have dried pumpkin what the equivalent might be? Jim and Pam thanks for your enthusiasm for preparedness and food security, it so encouraging!

My family loves hot Pumpkin Oatmeal cereal spiced with sliced almonds, pecan bits, cinnamon, clove and brown sugar added. Gonna try making it with pumpkin powder along with some of these recipes.
Years ago I worked in a restaurant that served honey butter on their scones. They mixed into the honey butter some marshmallow fluff, then heated it. It made a wonderful pourable honey butter. Ever since then I have kept two jars of marshmallow fluff with my preps.
Thank you so much for this video. My heart sank when you said you were going to discard the ends of the cookie dough, but then you said where you were discarding it. I was very happy. I make cookie dough just to eat the dough. I do of course make sure there is plenty for me to make my husband his cookies.

I have made up 12 quart jars of dry mixes, I love all the heathy bowl recipes, good bye ham and cheese sandwiches at lunch time. I so appreciate your educational information. We have a six month pantry, recently purchased a freezer, plan on freezer meals also. I like variety of different preps to have on hand. Bless you both for your generosity.
Thank you for this pumpkin booklet. I just finished drying & powdering my 14 lb pumpkin. I love your tip for running the chunks through food grater blade of my food processor. It works fabulously. Looking forward to trying pumpkin bread tomorrow, using my dehydrated powdered eggs. We must practice our recipes! A tip I have used for refrigerator cookies over the decades, is to pack it in empty cling wrap/wax paper boxes. I covered my boxes with shipping tape and they are still in good shape, even though I am sure they have been in use for 20 years or more. I put a piece of parchment paper in the box, pack the dough, fold paper over to smooth. Rubber bands work nicely to hold box closed. A quick edit needed on page 11 of the booklet. The dehydrating instructions for the pumpkin switched to carrot instructions.
I did the same thing! I also when out and purchased that instant pot Max, thinking I'd start pressure canning. But my first try cooking chicken was DISGUSTING! Maybe I'll get brave and try the canning function for some meat. I will definitely use for making my fabulous CHILI and SOUPS.

I’m so excited to try all these new recipes ! Our family loves pumpkin we put it in everything, soups, stews, beans and just boiled with other root veggies, in Puerto Rico we call that Viandas. Unfortunately it’s hot and humid all year round here in South Florida, hoping to get away this winter to a cooler place for the holidays. Thank you for the book and all you do !
