Great recipe! I have a question, at 2:48 you write: microwave for 30 seconds. What do I microwave? The gelantin before putting it together with the rest? Or I put gelantin in, mix, than warm up for 30 seconds?

You can swap with agar-agar and it will be more firm than jelly-like but both of them are flavourless by itself, so if the flavour is too muted for you might you need to add more sugar perhaps. I often use cooking tree’s recipes and never really notice the gelatin at all and find the sugar levels just right for my level of sweetness though…
but if it's just food coloring giving it those colors, then where's the flavor? it'd be like hoping to eat a very vibrant tasting cheesecake only to be met with an incredibly plain taste. I suppose this could be used more as a base that other people can use but other than that this will look great but taste plain. Looks genuinely amazing, but it needs a bit more focus on how great it is to eat than to look at.

You can usually replace gelatin with agar-agar. But I'm not completely sure
