I have a question about GF flour. Why use all of these different types of flour with xantham gum? Bob’s makes 1:1 baking flour which already contains xantham gum. Does that work? This is not criticism; I’m asking because I’m new to GF baking and I would love for someone to explain. Thank you for your recipes. I’m enjoying your channel.
We made these muffins and they were GREAT!!!!🧁🍫 . So fluffy😍 Thank you so much for the recepy, we made it lactose free. We substituted the buttermilk for the same quantity that was made out 2/3 part lactose free yoghurt and 1/ 3 part of lactose free milk mixed. Worked beautifully!!!
I just found your channel as I was searching for GF pancakes because when I cook pancakes, they have a bitter taste. I'm going to try your recipe. Would you know why when baking gluten free, there's a bitter taste? I've noticed it especially in cookies. I've tried Bob's Red Mill, King Arthur GF, Pamela's GF blend all with the same result. Not expired either. Any suggestions will be greatly appreciated as I was recently diagnosed with celiac so I'm in the learning stages. Btw, the muffins look delicious 😋 Thank you! Marie L.
Any suggestions for a buttermilk substitute? I am dairy intolerant but live in a country where milk substitutes are hard to get...would water and a dash of cider vinegar work?
I did as I suggested last week. used lactose free yoghurt and milk to replace the buttermilk. In total I used the same quantity as the buttermilk, 2/3 of was yoghurt and 1/3 was milk. Worked out beautifully, tasty and fluffy! I really recommend this recepy

We will try to make them this weekend with lactosefree yoghurt mixed with lactosefree milk as substitute to buttermilk
