WHAT I EAT IN A WEEK | easy + delicious vegan food 🌱

  • hey my friends! i missed you soooo much, hope you enjoy this simple week of vegan eats video :)
    please note: i am in the process of updating my website so some of these recipes from below will be added to my website in due time! thank you for supporting me and i hope you enjoy trying some new things in the kitchen :)
    creamy alfredo herby kind-of pasta sauce (lol):
    1 + 3/4 cups cashews, soaked for 1 hour in boiling water and drained
    1/4 cup nutritional yeast
    1/2 tsp pink salt
    3 cloves of garlic
    2 tbsp lemon juice
    1 cup water
    1/2 cup almond meal
    blended until smooth
    1 tsp dill
    1 tsp parsley
    served with 300g cooked pasta
    next door burleigh: / nextdoorburleigh
    peanut butter cacao smoothie bowl:
    splash of soy milk
    1 tbsp peanut butter
    1 frozen banana
    1 tbsp cacao powder
    1 tsp maca powder
    1 tbsp vanilla protein powder
    blended until smooth
    topped with your fave things :)
    rice paper bacon:
    you will need approx 6 sheets of rice paper! to make the rice paper bacon, you need to put two pieces of rice paper on top of each other, cut with scissors into strips so they are relatively even. then, soak two even strips of rice paper in water, run them through the mixture together and put them on the tray together (they should be stuck together!!). repeat with all pieces of rice paper and bake in the oven for 10-15 minutes or until at desired crisp.
    the rice paper bacon mixture:
    1 1/2 tbsp nutritional yeast
    1/2 tbsp smoked paprika
    pinch of salt
    pinch of pepper
    2 tbsp olive oil
    1/3 cup bbq sauce
    1 tbsp soy sauce (can sub for more bbq)
    1 tsp liquid smoke
    mix together in a bowl and use as mixture for details above ^

    spinach and ricotta cannelloni filling:
    1 + 1/2 cups cashews, soaked in boiling water for 1 hour and drained
    2 tbsp nutritional yeast
    1/4 tsp salt
    1/4 tsp pepper
    1/2 tbsp veggie stock (vegeta)
    1 1/2 tbsp lemon juice
    1 garlic clove
    1/2 cup water
    5 large basil leaves, chopped finely
    3/4 cup frozen spinach, thawed
    fill 10 cannelloni tubes and cook as directed on packaging
    indian takeaway: templeofspices...
    pumpkin chickpea curry:
    1 cup pumpkin, cut into small cubes
    2 cloves of garlic, minced
    1 tbsp olive oil
    1 cup coconut cream
    1 tsp curry powder
    1/2 tsp turmeric
    1 tsp vegie stock (vegeta)
    1/2 tsp salt
    3/4 cup canned chickpeas
    cooked in pot over medium heat for 20-25 minutes, served with rice and coconut yoghurt

    what diet do you eat?
    i eat a vegan diet, and tend to eat low gluten and low amounts of avocado and cauliflower due to digestive issues. however i do occasionally eat these foods and therefore include it in recipes on my youtube channel.
    what camera do you use?
    canon 90d with 10-18mm lens or 18-55mm lens
    how do you edit your videos?
    i use adobe premiere pro and highly recommend peter mckinnon on youtube for tutorials
    where do you live?

    how long have you been vegan?
    over 5 years

    only a b12 spray under my tongue 1-2 times a week, otherwise levels are perfecto!

    Hi!!! Been following you for a while and I love your content :) For the vegan gnocchi, my grandma from southern Europe makes gnocchi all the time, and where she's from it's actually traditionally made without eggs - so unintentionally vegan ^^ It's basically 2 parts flour to 1 part potatoes. Boil the potato until it's cooked through and mash in a bowl. Add the flour and some salt and shape the dough. I love to add some dried herbs at this stage as well. Then you shape them into tiny pieces, literally like the tip of your pinky finger, not thicker (they won't cook properly otherwise) and boil in batches - don't overcrowd the pot! Fill the pot with water, and when you add the gnocchi, you'll know they're ready when they come up to the surface and float :) Then you drain the water and fry them in a pan to get some nice surface and chew. I highly recommend frying in some vegan butter/olive oil and adding some fresh sage leaves + garlic

    Just a tip - when you slide ingredients from your cutting board, use the back of your knife, it will keep it from going dull :-)

    Have you tried using a mixture of mashed chickpeas, chickpea flour and perhaps soy milk (plus all the spices of course) for your chickpea scramble - the chickpeas add texture and then the chickpea flour and milk add the creaminess

    1:48 Where I live we make a dish very similar to gnocchi and some people use potato starch as opposed to flour! And guessing from its nature, you could also use tapioca flour instead :) Maybe with combination with some chickpea or oat flour?

    Love Soba Noodles. All the recipes looked really good. Specially that Cauliflower. Not sure if I've even heard od rice paper bacon. That's interesting. Sounds good.

    from how I hear it pronounced where I live, basmati is pronounced with an ‘ah’ sound for the a’s so you’re pretty much correct! I’m from southeast asia & quite a lot of Indians live here so it probably is right lol

    5:22 Maybe you should actually use soaked chickpeas instead of cooked? I remember Sauce Stache making a vegan scramble out of mung beans this way (JUST Egg copycat) and it worked really nice!

    I’ll never understand how so many countries eat dinner so early, your ‘late dinner’ is considered early here, we tend to eat dinner at around 9 pm. How are you not dying of hunger by midnight?

    No way! The other day I experimented with making vegan spinach and ricotta cannelloni, but for the vegan riccota I used the leftover 'pulp' from making homemade soy milk. It tasted really good actually! It has the perfect texture! (I'm posting the recipe on my account Rachels Healthy eats soon) :)

    Hey, these look really good. I just find it concerning that there were quite a few meals that didn't really have any major sources of iron or zinc, until the last few days (chickpeas, beans, chia, spinach). Caffeine can also deplete/block iron and zinc absorption - something to look out for, so good not to drink with/around a meal with iron in it. I know you usually eat more legumes/pulses (going by some of your other vids), but i really would suggest adding chia to your smoothies/cereals, and pumpkin seeds to savoury and sweet foods as a topping to be safe. Beta carotene, alium and vitamin C foods increase the absorption. Another tip would be to use iodised salt, kelp granules or eat seaweed a few times a week (or supplement if u cant be bothered). I can't seem to find videos where you consume much iodine, so I just wanted to warn you. It is as essential as B12, and most people, especially non-meat eaters don't realise this! Hope ur good x
