Frank , how do you feel about using a 30”Dx94L 250G and a 30”Dx48”L firebox

Great question! It’s oversized in my opinion. On a reverseflow it would be harder to manage your fire but an offset is more forgivable. I would run the firebox length closer to 30”-36” in that set up

This might be off topic to your video but I have a couple of questions about my smoker build. I built a smoker out of a 120 gallon tank. The firebox is 24x24 square box. The stack is 6 inch diameter at 36 inches height. I’m noticing that it is taking forever to cook on at 250 degrees. I’m using a fireboard ambient thermometer to track my temps. Is it possible that I have to cook at higher temps because of the size of the smoker?
