I will say one thing for definite for this video. Mike has one hell of a palate especially with the last one. Being blindfolded and getting Cheese and Pickle is quite a marvel to be seen. From knowledge having a great palate is a key thing for a chef to have.

"From knowledge having a great palate is a key thing for a chef to have." ...Yeah no shit. That's not "from knowledge". It's the most basic fucking obvious thing. And it was hardly a marvel. He tasted pickle and cheese in something made of pickle and cheese.
@grabble7605 when food is frozen, it's much more difficult for us to taste. Furthermore, when we add cream, the flavor is drowned out that much more. If you've ever watched gourmet ice cream making, they have to make their ice cream base flavor 10x more intense bc of what freezing and dairy do to muddle the flavors.
Loved the Mike/Ben pairing for this. Mike really is on his game when it comes to tastings - I like that he happy & excited in this type of format and not stressed out as in the cooking segments.
I agree! I think Ben and Mike were perfect for this. So enthusiastic about it but also really serious about figuring it out. I also died when they brought out the pea ice cream immediately after Ben had guessed pea 😂
Mike is definitely a super taster. He can taste more flavours than the average person. This explains his aversion to strong cheeses, red wine and such. I'm sure it's both a gift and a curse!
Frozen peas straight from the bag were a definite snack as a kid in summer (American). I still eat a few frozen peas each time I make anything with them!

I was waiting for the food team to sneakily take the ice cream bowl away and just have Ben and Mike frantically slapping around the table trying to find something that's not there.
I love how confused they are when they start out - the tapping to find the ice cream, asking if they're working together or competing, the excitement on their face when they realize they're gonna get to taste 6 ice creams - adorable. Ben and Mike really went on a journey here didn't they - Mike looking traumatized when Ben brought up the duck choc ice cream; Mike getting excited while talking about crumpets; Ben's disappointment with the pea ice cream; Mike laughing at the thought of some one bringing an ice cream scoop back to the office; Ben constantly being so methodical every time he's tapping to look for the bowl; Mike being excited when he realized what the flavour was; Mike being ecstatic about his guess being right; talk about an emotional roller-coaster. This looks like one of those videos where everyone bts would've been cracking up cuz the guys are blindfolded and have no idea what's coming next!
Old Bay Caramel - Old Bay is a spice made in MD in the US and is often used for steamed crabs and other seafood. Adding it to deep rich caramel really makes the flavors stand out!

I bought a new ice-cream machine at the beginning of the year & have been experimenting. My biggest success was turning Ottolenghi's beetroot za'atar with goats-cheese & hazelnuts dip into an ice-cream. It's great with a salad & pea-shoots on a hot summers day. You should try carrot & caraway seed too. Cooling, earth & sweet. Pea ice-cream is also nice with a salad. Brown-bread ice-cream has long been a favourite of mine, especially with a tart raspberry or gooseberry coulis drizzled on top. I love sweet Chilli sauce and cream cheese. The Sweet Chilli icecream might be nice with a cone made from salted corn chips or just use corn chips as an eatable spoon.
I have worked in a couple of places that did savoury ice-cream. One of the most popular was a miso caramel and another was wasabi that was suggested to be served with fish
I have been having fun trying the VanLeeuwen ice cream here in the US. The most recent flavor i have had was Malted milkshake with french fries. Other past flavors i have had was Pizza, hot honey, mac and cheese, and many more.
Living next door to Ruby Violet, I tried many weird and wonderful flavours: banana & liquorice, basil & lemon, beetroot & horseradish, cornflakes & milk, stilton & cranberry, spiced pumpkin, Bloody Mary, Bramley apple & fennel, mint & cucumber - my personal favourite, black sesame... Such a shame they closed the original shop but the King's Cross one is well worth a visit (or many).
The first one reminds me of soy sauce caramel I used to make. I always considered it a big upgrade from salted caramel. I always wanted to see if I could crystallize it to be able to use it for creme brulee topping!

From what I have come to understand Blue moon is an ice cream flavor with bright blue coloring, available in the Upper Midwest of the United States. Both one of my Faves and unique to Mid west of the US.
Idk about the UK, but here in the USA its pretty common practice to dip your fries (chips) in a milkshake (usually vanilla). Gives a wonderful sweet to the salty, the cold and hot and crunchy and smooth playing nicely. I imagine that ketchup ice cream would do very well with that!
Some people do do that but only with the American fast food style of fry (we call the little thin ones fries and to us fries are that one specific kind of chip and chips is the word for the category of food, same with biscuits and cookies) not a British chip which are thicker and more similar to what you might call a steak fry. And I do agree it's really nice when it's good fries and a nice vanilla milkshake but I'm still dubious about the ketchup ice cream.
In America we have a company named Van Leeuwen that does weird flavors. The Pizza one and the Mac and Cheese were amazing. They also do a Earl Grey, that you may like.
Parmesan Ice Cream and Artichoke Ice cream, tried them in northern Norway served together with savory meat dishes (2 different dishes), divine!! LOVED THIS EPISODE!!! You should try many more!!😃
In the Southeastern US there's an ice cream combination that a lot of people growing up in rural areas know and love. That's chocolate ice cream with crushed "Cool Ranch" Doritos (or the equivalent store brand) sprinkled on top. Some people like them completely crushed into powder, others like them only partially crushed so that there is more crunch. Don't know how it started or why, but it's a thing, and it's something anybody can try.

On savoury ice cream flavours: try to get kuromitsu sauce (in japanese specialty stores) over vanilla bean (island creamery), letting it soften not fresh from the deep freeze = better than salted caramel goodness. They used to sell it as as a flavour of a soft-serve dessert, in the fast-food beef and rice outlets called "PepperLunch" - but not anymore... Better than sucre-grain de sel (de la mer), Super super.
I was visiting Salmiakki Festival in Helsinki and a Finnish company Valio had taste tasting for blue cheese ice cream and blue cheese with licorice ice cream. Both of them absolutely vile creations. And I really like blue cheese and licorice normally!
We’ve got a shop in Durham, NC (USA) called The Parlour that serves up seasonal and sometimes weird, experimental flavors. Some odd favorites have been a fruity pebbles milkshake, The Four Main Food Groups ( inspired by the movie Elf), corn-blueberry, beet stracciatella, honeysuckle soft serve, and the Drunken Sailor sundae which has salted butter caramel ice cream topped with potato chips, chocolate covered pretzels, and chocolate sauce.
This was soo fun! Thank you. I really think Ben's got the blindfold thing down with the tapping to not put your hand in the dish. Am also super impressed with Mikes palate. Great video everyone.

Savoury ice cream battle!! I've had my share of unique ice creams, in Italy I had (unsweetened) parmesan ice cream with fish that was so good! And a local Toronto place Wong's makes some very interesting flavours like salted duck egg and (my favourite of theirs) buttered popcorn with sriracha!
For videos like this, I think it would be cool for us non-UK people if you showed the product itself next to it. As a Canadian, I have no idea what a Branston pickle looks like and have no reference unfortunately.
In Canberra there used to be a burger chain called Mookie, that did a peanut butter and miso milk shake. There's also a bakery called The Kraken that does a peanut butter and miso toastie. It's a flavour combination that extremely works and I could definitely see it in an ice cream. Also this video reminds me of the Iron Chef episode where they made a lamb shank dish with a capsicum sorbet. The idea of "savoury ice creams" as a flavour pair in dishes is something that seems like it should be more common, and something ripe for exploring.
We love making ice cream, and approx. 10 years ago we made various experimental savoury ice creams for shits and giggles. Horseradish was interesting, garlic was surprisingly good, but the absolute winner was the smoked bacon ice cream. Speaking of which, I need to try a smoked bacon and maple syrup ice cream.
I’ve had some pretty whacky flavours of ice creams, but I’ve been to this store and the flavours are mind blowing weird. Excited to see which ones you’ve chosen 🍦
Those are really some weird flavors, I may personally give the soy sauce one a try out of curiosity. But that crumpet one looks delicious tbh and would 100% eat that
When i started watching you guys years ago in my college dorm, never would i ever have thought "Mike would absolutely crush it in culinary school" would be a valid thought. 😂 He really has come so far.
I really enjoyed this especially since I love flavouring up boring morning oatmeal - sweet chilli and miso particular faves. By the way, here in Canada a best seller is ketchup flavoured potato chips (crisps)
After seeing the Pea one, I want to see the team either make or try an entire Sunday roast dinner in ice cream form - that is: a Sunday Sundae.

I would like to see these served as Sundays with mixed flavors and toppings as a challenge.
Great idea!
Just google branston pickle
In Canberra there used to be a burger chain called Mookie, that did a peanut butter and miso milk shake.
There's also a bakery called The Kraken that does a peanut butter and miso toastie.
It's a flavour combination that extremely works and I could definitely see it in an ice cream.
Also this video reminds me of the Iron Chef episode where they made a lamb shank dish with a capsicum sorbet. The idea of "savoury ice creams" as a flavour pair in dishes is something that seems like it should be more common, and something ripe for exploring.
I once had a duo of black and white sesame ice cream at a sushi restaurant, I'd deffo recommend them.
I don't think we praise Mike's palate enough. Spot on every time.
Thanks to Sorted I've started using Maldon salt.. and I would totally try the ice cream 👀
Mike was a-ma-zing in this !!! So fun to watch !
I had red bean ice cream in an izakaya and it was soooo good
Sounds fantastic!

Which ones did you try Alex?
@@SortedFoodyou're awesome 🎉🎉🎉🎉❤❤❤
@@SortedFoodI was stuck to the sorbet so the petit pois and ribena ones. Loved both. But not together 😂
We bet Ribena was good! @@alexdavis5766
@@SortedFoodhere in Colombia we have cheese on ice cream and cheese ice cream!
I love seeing Mike so excited and proud! ❤😊
Good job Mike!
Thank you!
Jeni's in the US has 'everything bagel' ice cream. And it's by far my favorite flavor from them.
Quote of the Day: “It tastes Brown.”
We swear colour has a taste sometimes 😂
Growing up in New England, tomato soup spice cake was a popular homemade cake.
Those are really some weird flavors, I may personally give the soy sauce one a try out of curiosity. But that crumpet one looks delicious tbh and would 100% eat that
The crumpet one was super delicious!
@@SortedFoodYessir! Love crumpets
When i started watching you guys years ago in my college dorm, never would i ever have thought "Mike would absolutely crush it in culinary school" would be a valid thought. 😂 He really has come so far.
I scream, you scream, we all scream ice cream! So happy to see the Ice-Cream based Discourse.
Happy Wednesday to SortedFood HQ and the community!
I really enjoyed this especially since I love flavouring up boring morning oatmeal - sweet chilli and miso particular faves. By the way, here in Canada a best seller is ketchup flavoured potato chips (crisps)
I've had a rice pudding ice cream that I've been looking for ever since. It's not even that out there, but still hard to find.
Mike is so proud of himself, and honestly he should be! He did so good!
Mikes palette has improved greatly over the past decade! Well done!
Of all the challenges to knock out of the park, I can't believe the boys did so well on this one bang on mate.
i hope you guys do another round of these
How cute is Mike "We so nailed this!", its nice he shares the success even though he was predominately figuring it out. :)
