It might be over deep to post this on a restaurant video but this is my favourite TH-cam video of all time. Not long after this video was out all those years back I had a dr*g issue and one night in particular I was laying in bed wired and I somehow found this video and it really calmed me down and grounded me cause I found it so beautiful. The reason why this is so pricey is because of the ingredients and amount of man power it takes to execute this. It's not about being pretentious or cocky. It's about an experience of fresh flavours you have never had before, because the chef in the kindness of his heart has chosen to release his thoughts into the world, and onto a plate for you. I wanna try that coffee!
Nope. That's how they explain this. All the ingridients they use are other found by kitchen crew for free or very cheap. Name the pricy ingridient they use exept caviar? I don't see any. Jellyfish? Do they buy it? Nope! They just took it from the sea, there are plenty of them. Unfortunately I know how the high level restaurant kitchen works from inside, so I do not buy your explanation. Restaurants like Noma is like abstract art with shit of the artist in a jar.
@@Eeppoonn you do realize that foraging requires really substantial manpower, right? Like, sure, they don't need to pay for the ingredient they found, but the fact that they go out foraging substantially increases the price of the labor involved.
It's art as much as it is food. When people put this much time and effort into cultivating refining their skills, the end result is going to be more expensive.
My memory of eating at Noma when they came to Sydney was that all dishes were very intense in their natural flavour, while also highlighting many unique ingredients. Definitely once in a lifetime for me

Sorry I dont eat that well.And Rene and Kenneth had to make own food,nothing they learned from any,And Kenneth was the most School friendly but Rene had High values,would never thought he ended up as a High chef.But I know em and how they were raised.Not much Denmark over those 2 but Big hearts.
when i think of eating at the best restaurants in the world , i assume it to be up tight not relaxed and stiff feel. noma 2.0 has a very relaxed welcoming vibe like i am eating at my house with my friends .

Thanks for your feedback. I try to capture the decorations, but it is quite difficult because I am just another paying guest. Often, there is no time, or other guests are in the way, or it will just cause a lot of stress if I move around the restaurant. But your wish is duly noted :)
You actually eat the genitals of the sea urchin, but in this video they were hidden underneath pumpkin seeds. The dish was amazing - one of my top uni dishes ever.
This season (Feb - June) was only seafood, yes. Now, June-Sept will be vegetables only. Then game meat and everything edible from the forest from Sept-Jan.
I didn't enjoy the jellyfish too much. Didn't taste bad, but a bit bland. Like seaweed consommé. The sea cucumber, however, was amazing. Salty, sweet, and umami. The skin was like caramelized chips.
I try to cover all interesting restaurants in Scandinavia eventually, but I haven't booked a table yet, no. I believe they are already sold out a few months, and the opening is next year ...

I've been to Greece many times, and the food cannot be compared to Nordic at all. Completely different seafood. Hot vs. cold waters. Besides, this is just the current menu of Noma, and the seafood season is already sold out. Your next shot for a reservation is the forest menu in late autumn. PS: Noma is in Copenhagen, Denmark, but I actually live in Norway. Come here instead! ;)
Correct, it's an all seafood menu. Then it changes to all vegetables in the summer, and focused on game and meat in the late autumn. That's the new concept of Noma 2.0
I hate sea urchin , I wonder if they make it edible or if it has its normal horrifying taste , Also to the Cloud berries, i never knew till i started watch this channel that they worth something, i lived in the North of Norway for 6 months and i used to climb the trees to collect cloud berries.... According to this i must have ate a billion dollars worth of berries.
Sea urchin of bad quality is really bad. These guys get the best quality you can get. It still has a different taste than most other things you've tasted, but Noma knows how to make it a delicious dish!

They were really secretive about that dish. It tasted like a consommé from the sea. Not sure how many % were actually jellyfish. It's certainly not just jellyfish on a plate - but made to look that way to deceive you :)
