Hey, I love your passion and drive! I am interested in opening a boba truck in my area. I have been trying to figure out how to speed up service and this video helped me. It is pretty clear that pre-making your bases is the best way to go. Keep posting!

We don't pre make often, this was an event where they all came at once! But yes if you need to, it's efficient! Also keep your menu limited. I started with a huge menu and it slowed us down like crazy! After awhile you'll get really fast at making drinks! Good luck!

Question about the tapioca pearls: how well do they refrigerate after cooking? Like if you make a drink, sealed it and put in the fridge, would the boba maintain it's chewiness or not? Curious as I wanted to make some pre-made bubble teas for a family event but am unsure if the boba will stay chewy all day in the fridge/cold.

They will stay chewy for the day, but it definitely affects the texture. Also, all of your ice would melt. I'd recommend getting some 1 gallon jugs and putting the drinks in those, and have the tapioca separate until ready to drink
