Iliana is the chef and proprietor of the Michelin Star restaurant Elizabeth in Chicago, dubbed by Esquire one of the decade’s 40 most important restaurants.
A pioneer of 'new gatherer' forage-forward cuisine, Iliana is also the author of ''Burn The Place' -- the first food book to be long-listed for the National Book Award since Julia Child in 1980.
This is her story. And it's awesome.

Anyone who opens a restaurant is crazy or has way too much money. We started a farm instead because that would be easier.🙄 interesting though how the whole scaling issue is the same. We like to be hands in the ground farmers. We don’t want to scale up for the same reasons that quality goes down and you are just managing not really actually expressing what you started the business for in the first place for. Either way the food industry is tough. Especially if you are trying to provide actual quality.
On a totally separate thought I loved the conversations about the neighbors. I always saw that folks on the right and left had a lot more in common then appears. Foraged foods. Whether that is gathered or hunted. Both depend on taking care of natural places and especially larger ecosystems. Everyone should pay attention to who in power really cares about this type of resource and protecting the air, water, and land that provide clean foraged/hunted foods.

Amazing interview Rich. What a cool person she is. I'd love to have a meal at her restaurant some day. Living in Australia makes that a bit hard, but you got to have a goal eh?! Ha ha. Love your work. Thanks again

I despise the phrase "girl boss". Why not just "boss"?🤨🤔

    • @richroll

I originally used this phrase only because she uses it herself - she has a plaque in her kitchen that says "GIRL BOSS". However, your point is well taken and I have changed the title. Thank you.

I do see both sides and also respect that she herself embraces and uses it. We’re all so similar but yet different in others.

If she likes vampires she needs to read Carmilla by Le Fanu the grandaddy of all vampire books( pre dating Bram stoker)which features a female( lesbian) vampire or should I say GIRL vampire...you should not kowtow to the" girl boss" haters...later o my brother

31:00 She is competitive with other men, but not women
Men are competitive with each other in order to glorify each other and improve each other. When men fight they actually tend to bond through it. When women fight, they never talk to each other again. So if she wants to be like a man, then she SHOULD bond with other men in doing so. But that may not be the case, since she is a WOMAN wanting to be competitive with men, which is when it all goes awry.
ALSO, the "confusion" in the brain (gender fluidity, and being "gay" etc) is due to a flaw in the development of the prenatal hypothalamus, there needs to be 400 cells there in order to be heterosexual. The number of cells is diminished in certain parts of the world (due to mineral deficiencies in the soil/diet). Lower numbers lead to lots of later "developmental" problems and "confusion". These developmental issues and confusion are a problem, not something to be "embraced" by pop culture (the worst "parent" is pop culture -- which is a degenerate culture at best, with no wisdom or real guidance for it's pupils/adherents).
