I feel like the next step is to turn Brick (and all the other rats) into Raticate. I doubt it'll be too much because all the mod-maker probably needs to do is make the rats brown, tan and fluffier.
The problem the mod only looks to reskin the characters but not the pizza tower itself. And Brick is from the pizza tower soo an reskin for Brick wouldnt have sense. But who knows

I think it's because of the many Pokémon that gets added in each new 3D installment, It's hard to animate all of them so they just reuse some animations from older games, and it makes them feel very bland at times. I do think Eevee is still very cute though

Pikachu and Eevee are 'rival mascots' at this point (Let's Go Pikachu and Let's Go Eevee), so it makes sense even without Ash. That being said, it is my understanding that this Eevee is a reference to a specific animated series online, and there is a human avatar of sorts, so maybe he could replace Mr. Stick.

As of right now all Gustavo player and player related sprites (except for the technical difficulties) are done, but almost everything else with Gustavo remains unchanged

I find the idea of the fast food saloon card honestly kind of funny. In the original game it's peppino looking back at either you, or some character behind the camera. In this mod it's the Eevee he's looking over his shoulder towards.
i also noticed that patafoin made a sprite reference to the eevee imitating the impidimps from the anime when time runs out and Showtime is active and of course while walking or standing still will play that animation for eevee.
