Good to see Guga, I've been doing pork skin in the microwave for 15 years and telling everyone about it and if the skins to dry soak in boiling water for 2-3 mins pat dry sprinkle reasonable amount of salt on both sides then loosely roll over a piece of oven paper and then microwave on high for 3 to 4 mins let stand for 4-5 mins to crisp up properly then dust off any excess salt and enjoy:)

I took off the skin and tried to crisp it in the broiler but I ended up burning it. The meat was so tender and juicy though.
That crispy skin reminds me so much of my grandmother's pork roasts. She didn't have a microwave or a flame thrower. She got it crispy like that in the oven. My grandfather would break off little pieces for me and him. The best.

Gosh dang that looks delicious! I live in Western North Carolina and in the 1990s a man from Miami opened up a Cuban sandwich shop in a tiny restaurant attached to the jewelry store I worked at. It was an old house that had a long galley kitchen on the side of it. No room for tables or chairs. It was to go only. He kept it simple. Fresh Cuban bread, mustard, 2 types of pork, Swiss cheese and pickles. The magic was the meat. He did not use deli ham. He baked his own and marinaded and slow roasted his pork roast. I’ve been craving that sandwich since I was 19-20 years old but it’s been impossible to get a good Cubano here since he shut his restaurant down. People use the wrong bread, use deli ham and don’t marinade or slow roast the pork. It’s a mess. I always get a good Cuban when I travel but I’m going to start making them from scratch. The bread, everything. I’ll definitely be trying your marinade.
Can I put in a request? I'd like to see you cooking a meal for all your family and friends at once like a big garden party or something, the pleasure you get from cooking for others is really evident in your videos and one of the best things about your channel.
ALSO FYI: I cook these for my family every year for holidays. The crispy skin is really something that makes it really special. I always make it in the oven. I measure around 30min per pound at 325 F. Take the skin off and brush it with vinegar over the top, then put it on top of the shoulder once again and let it cook with the whole thing. It will be ready when the shoulder is ready. Very crispy and so delicious. :) Enjoy!
I have no doubt that recipe is extremely delicious but for more cuban authenticity you can use coriander instead of parsley in the mojo and also add it to the marinate. Coriander is most commonly used in cuba than parsley and it has an amazing flavor. Thank you Guga for another mouth watering video.
