I made it with the VERY WELL ALMOST DRIED crushed pineapple, chopped green onion and tiny cut up bacon bits. But I also first started out with blending by hand grated hard cheddar with the cream cheese until blended. Then I added the rest. I wanted as firm as I could get it cream cheese which I rolled into donut hole size balls. I didn't want them to collapse on top each other thus the firmer texture. I actually dropped them by spoonfuls on a parchment sheet to chill for an hour before rolling them into the actual balls. The night before serving I rolled each in chopped chives and the tiny bacon bits. They were stacked in a pyramid surrounded by alternating strawberrys and wrapped chocolates, served on a pedestal cake plate. People could take the little mini cheeseballs as a two bite finger food. It worked as they stood firm but soft, still spreadable if desired. I love making personal size cheese bites like lebneh but there was no time for that. The entire platter was empty. But grating in a hard cheese of choice does firm them up while adding additional flavor and letting them still be spreadable or just a chunk of cheese to just bite into and enjoy by itself. I have seen them spread out in a tray with a pretzel stick pushed into them so you could just take it from the plate like an hors d'oeuvre. Since mine were stacked in a pyramid, I had a small tong to pick one up for their plate. They all went.
Years ago at a gathering I tasted a dried beef cheeseball, it was delicious. I had a look around youtube for something like I remember. I thought I would put my own spin on plans to make one, a half recipe since it is just me. Cream cheese, dried beef that comes in a glass jar, finely shredded cheddar or maybe pepper jack, diced green onions, garlic powder, season salt, Worcestershire sauce

Hi Catherine...my cookin* buddy! Loved it! ...i..have had this recipe since the '70's....from a friend of mine...did it all like you..EXCEPT...added 2 tbsp of CRAZY JANES' MIX.UP SALT. ( omit the salt & pepper)....(sometimes..I made two balls...'cause it make such a big ball...) ...plus before rolling in nuts...I sprinkled Parsley..on top of the nuts before I rolled them in the nuts. I have a recipe for a cream cheese spread that is simply a mixture of apricot jam with a little horseradish and spread over a brick of cream cheese. I’m thinking I could use drained, canned apricots or maybe rehydrated dried apricots and a little horseradish to reconfigure my recipe into this one!
