If you don't have $$$ for a mixer, you CAN knead the dough yourself, but be prepared to do it for 10 minutes. Impossible for arthritic senior citizens like myself, so we have to buy at the store, or do without.

Yes, absolutely! I Would also add some fresh thyme or oregano for added flavor.

Greek mamas will rather shake about your use of the mixer ;)
A nice variation on the pita is to put some oregano in the dough en before baking sprinkle some sea salt on top
