You can also tell the sheriff and when burk is about to end him, use V.A.T.S and take burk out... the timing is the most important thing... the sheriff also thanks you afterwards for saving his life...
This whole quest, memey as it might be, is such a testament to Bethesda's inability to write compelling, interesting quest choices. Blow up the town full of innocents for no real reason, or... Don't. And to top it off, Burke is pissed enough he runs up to you to complain about it IN THE MIDDLE OF THE TOWN ??? If he waited nearby with a bunch of hitmen to try and kill you, sure, but it makes no sense for him to do this, yelling about his plans to blow up the place while still SURROUNDED by the town's inhabitants.
In my most recent play through I let the “inform sheriff Simms about Burke’s plan” option play out. After shooting Lucas Simms in the back of the head nobody in Moriartys saloon does a thing. Kinda a weird script that Bethesda could have developed a bit more realistically. I would have imagined that seeing the beloved protector of Megaton murdered in cold blood would rouse the inhabitants of the saloon

This isnt the alternate solution. The alternate is to seduce Burke as a female character. This is just killing him after you completed the quest line which you can do with...practically every quest in the game...

The funniest way to dispose of him is use Black Widow to convince him to spare the town. He not only does, but he writes you letters afterward.
