For “cheese” I used half tofu and half boiled cauliflower for cheaper and healthier version, it was very nice. This recipe took me longer than expected but it was deliciuous and my not vegan family loved it, thank you!
Ausrine: Try Diaya Cheese. No dairy. Made of Tapioca Flour and it tastes like real cheese and the flavor is there. Daiya Cheese comes in different flavors.

This was delish! I dipped the eggplant in garbanzo can liquid that I whipped before baking (?) I don’t know if it helped or not I was also making hummus so why not use the juice…the eggplant was nice and firm but cooked in the lasagna. This is such a protein packed, filling meal! I live in a house of massage therapists so it’s a great meal when there’s a day when there are a lot of clients and not a lot of time. Such a great dish. Thank you!!!
Guys I tried this today.....I didn’t have parsley so I substituted with cilantro and I used tomato sauce because I didn’t have paste. As far as results........this recipe is SUPER good. I was nervous serving my parents because they love the taste of non vegan lasagna but they loveeeeed this one. They said this recipe would be a success in any restaurant.

Great overall recipe for an eggplant lasagna. This was my Second time trying out a new whole food plant-based vegan recipe as I must say this is now my favorite recipe. Very easy to make and simple ingredients. I added some fresh rosemary and fresh basil after it was baked. Thank you very much for sharing😊🙏🏻❤️

This recipe actually reminds me of an italian dish called "parmigiana" with layers of eggplant and tomato sauce. It's not a vegan dish, but it's very easily to veganize by substituting eggs and cheese. Nice recipe btw!

When you say the prep time for this is longer than regular lasagna that ain’t no joke it took me about a good hour and a half to get everything ready to bake…… It is currently in the oven baking now I’ve cleaned up the kitchen wash the dishes I used a disposable aluminum pan a really good one it was about four or five bucks and now I’m going to take my shower as my dinner cooks and I hope it turns out good thank you for sharing this recipe

We've wanted to make videos for years but always gave ourselves excuses like: "We need professional lighting", "Our kitchen isn't nice enough", "Our filming equipment isn't good enough"... etc. But we finally just decided to hell with the excuses! The predicaments are never gonna be perfect and that's ok! Because our first and foremost objective is to get our recipes out to the vegan community! And hopefully even curious meat eaters. Being vegan is our life and cooking/baking vegan is our passion. There's been so many trials and errors and coming from an ethnic family there have been so many recipes that we couldn't find veganized online so we had to make them ourselves. So we really just wanted to share our wisdom and love and passion with the community that we feel so belonged to. I have to make this ricotta!! Lasagna is my abso fave! I usually just make it with mashed tofu and lemon juice "ricotta" but your recipe looks so decadent!
Ravioli for sure. It's more rare to see vegan versions than it is for the other two. I would love to see a recipe for a vegan chef boyardee style of raviolis. I used to want that all the time as a kid!
The homemade tofu ricotta I make is similar to yours, minus the cashews because they are so expensive where I live. I thought it was good with just the tofu and other ingredients but I'd like to try it with the cashews sometime!
I haven't done eggplant lasagna, but I've done something similar with zucchini. I'm definitely going to have to try eggplant as my pasta. I love watching your channel even though I literally can't be vegan cause I'm allergic to everything. :( It's great inspiration for me though. The next lasagna I make is definitely going to have lentils in the sauce cause it looked so good!
I usually brush some oil on my eggplant before roasting. Did you leave that out just because your recipes are oil free, or is there another reason, like making the texture of the eggplant a bit drier or something? That soft, roasted, oily eggplant flavor is my absolute favorite so I don't know if I should brush any oil on mine when I recreate this recipe - because I definitely will asap, it looks deeelish!

Hiii so made this lasgna and i liked it for the most part. cutting the eggplant was kind of a pain. im def investing in a mandolin or something. also my lentils were kind of still tough. maybe i didnt cook them long enough. can i replace them with veggie crumble instead or would that not cook so well? and the egglant skin was too chewy too but i figure its good for me so i ate it anyway lol
What else can I use instead of lentils? I really am not fun of the taste of lentils but overall love this recipe and want to try it plz someone give me and idea
I'm not a huge pasta eater, so between lasagna ravioli and "plain old" pasta, when it comes to vegan recipes I prefer ravioli (or a version that is very similar to it), but if it's vegetarian than lasagna all the way (with a spinach filling). I enjoy vegan lasagnas too, but typically when I go for a homemade "lasagna" I make it with potatoes/yams (so not actually a lasagna as there is no pasta involved). This recipe sounds really good, I'll have to make it some time. Also seems to have a fair bit of protein, so very cool. I think if I do recreate it I'll use eggplant for half the tray and yam for the other half, as I'm not very familiar with eggplant (have had it multiple times where it's been not great...). If I added mushrooms to this, would that be overkill? e.g ruin/overtake the other flavors.

I’ve used steamed cauliflower instead of tofu and it works wonderfully as well :)

If you want to salt the eggplant, you can rinse it off afterwards and then dry it before roasting.

Why not slice the eggplant lengthwise? Maybe it will give better coverage
I found that it was easier to arrange with the circles, but you can try lengthwise if you'd like!
I slice it in circles as well because I think it's easier to slice the lasagna 😁
I think slices with a mandolin would be nice! :)

It’s very delicious. I would not call it a lasagna, it’s more of a casserole, but even so. it is really good!

I didn't use oil because I try to keep my recipes Oil Free, but you can definitely add some if youd like!
