- I love the aroma of roasted red peppers and eggplants. This is the scent of the incoming autumn, a scent from my childhood. „Kiopoolu” is a very popular roasted eggplant and pepper spread in Bulgaria. I love it!

Ingredients for 8 servings:
3 eggplants
2 green peppers
2 red peppers
1 peeled tomato
1 clove of garlic
4 sprigs of parsley
2 tbsp sunflower oil
2 tbsp red wine vinegar
salt
