His food is amazing but the average palette is more refined now. I grew up eating exactly like his videos and it's my happy plus but I can admit the seasoning is a little basic and the food is a bit better with a trained touch and proper seasoning to accompany the food.
Like your videos, we were making jalapeno poppers once and my 10 year old son was helping, he decided it was not necessary to take the seeds out. My buddy and I grabbed a popper before they were done and both of us ran for the water hose, that pepper lit are day right up. Couldn't get that pepper oil off your face, the more you rubbed, the more it spread.
WOW, my family does similar with wild duck breasts... no bone, and slice a pocket in the fillet for cream cheese and chopped jalapeno, wrapped in bacon, grill to med/rare... so YUMM. Have to try the flour and quick fry on them. I have never had quail but hear they are one of the best wild birds to eat.... maybe one day :) Thank You Again :)

Love me some CKR! Been binge-watching him for a full week. Here's a friendly tip from a fellow hunter-cook-griller to fellow Cowboy Kent Rollins fans: If you're cooking a meat that's to be wrapped in bacon, and you want to greatly reduce the chance of over-cooking the meat, *half-cook* your bacon before wrapping! We all want the bacon cooked enough, but sometimes that takes long enough that the meat gets over-cooked and dry.So, if you're at home, put the bacon in the microwave for a couple of minutes. If you're out in nature like Kent, just lay a few strips on your skillet and let them sizzle till the fat starts turning a little clear. I even save the bit of grease released and brush it on the meat while cooking. This technique REALLY help get the bacon fully cooked without over-cooking the meat.
The only time I met my grandfather on my father's side when I was 14 we went out and got us some quail, he taught me how to fry them up real good add the was the best bird I ever had.
Grandma always fried Quail just like Chicken,or any thing else,salt, pepper,flour,Lard or Crisco and a Cast Iron Skillet.She also made Mashed Taters,Gravy and either corn or peas.Good Supper.She always made sure that their wasn't any Buckshot in the meat.I never found any but she always would say,Look out for the Buckshot!I forgot to add that she always made biscuits.Biscuits and Quail Gravy was also a GOOD BREAKFAST,When going out in the COLD MORNINGS TO WORK THE CATTLE FARM/RANCH.

Wonderful!! Dammed fire ants have taken out the quail here. Takes me back to when my aunt cooked quail when I was a kid. She and my uncle used the pickup for a bird dog.
Jacob C True. The ants have decimated quail populations here on the Southeast. They’ll eat the eggs too. I’ll kill fire ants anyway I can here. Nice & slow is my favorite way.
I forwarded this to a friend of mine who has access to a number of different leases. Depending on how well they keep frozen, we're looking at some good snacks come SuperBowl time. We're also looking into trying to train a husky to think he's a bird dog; sorry, there's already a beagle that's about as smart as a hammer. Keep cooking for us. I haven't had much of an appetite after chemo, so I like something to stir the taste buds up.
Reminds me of Dove. We used to hunt dove over a millet field in SW Mississippi. Cook up a mess of birds on the grill, and your tongue would almost slap your brains out, lol. Finer than snuff, n not near as dusty!

In southeast Oklahoma quails are just about non existent, fire ants, and predators have just about wiped them out. A couple of weeks ago I went up to McAllister, Oklahoma to see my sister, i had hardly gotten out of my truck and heard a bobwhite calling. I just stood there and smiled.
I can't hit a quail with my bow, but I'm sure this would be good with some chicken, or a game gen. It would probably even work with venison. Grilled jalapeño popper blackstrap.
I really enjoy your videos and this is a recipe I would like to try. I was noticing that you don’t have anything for other game meats. Squirrel, rabbit, pheasant, venison, etc. etc.

I use my bacon press to brown bratwurst on all sides. I use tooth picks to make for easy turning.
