According to Field (2013), in binary logistic regression, you are trying to model the probability of a binary outcome (e.g., success/failure, presence/absence, etc.) as a function of one or more predictor variables. The predictor variables can be continuous, categorical, or a combination of both.
If you have created a new variable based on the existing predictor variables and you want to use this new variable in your logistic regression analysis, you can certainly calculate the mean of this new variable across all your samples. However, you should also consider the distribution of this new variable and whether it is appropriate to use it as a continuous predictor variable in your model.
For example, if your new variable is a composite score based on several Likert scale items, you may want to treat it as a continuous variable and include it in your logistic regression model. However, if your new variable is a binary indicator variable (e.g., 1 if a certain condition is present, 0 otherwise), you may want to treat it as a categorical variable and include it as a factor in your logistic regression model.

Are the values in the cells a number or the text of "Strongly Agree, Disagree etc" ? I get an error that says the numeric agreement is not supplied when I try and recreate this.
Yes, they range from strongly disagree to strongly agree. Make sure that they are coded 1, 2, 3, 4 and 5.

You can simply run descriptive stats and check the data for outliers or any like this. Then you can run normality and reliability tests
