- Authentic Kapampangan Sisig
Sisig is a popular Filipino dish traditionally made from grilled pork jowl, pork ears and belly, and chicken liver, seasoned with the tanginess of calamansi juice, crunchy onions, and a hint of hot chillies. It is popular from my hometown - Pampanga, and specifically where I grew up - Angeles City.
In 2003, the city mayor initiated an annual celebration "Sisig Festival" (Sadsaran Qng Angeles), held every December in Angeles City, Pampanga. The festival also highlights Sisig through a contest where chefs compete in making this delicious dish.
And in 2017, Angeles Ordinance No. 405, Series of 2017 declares "Sizzling Sisig Babi as an Intangible Cultural Heritage of Angeles, and establishing systems and policies in safeguarding the original recipe of Sizzling Sisig, providing mechanisms of implementation, and for other related purposes”.
The Kapampangan sisig does not have mayonnaise nor egg on its list of ingredients. The creamy texture and depth of flavour come from the grilled chicken liver.
