Made the chocolate ones divided into 6 portions instead of twelve, turned out lovely! I haven't had muffins in a while but these seemed to have more of a cupcake texture than the somewhat denser "bready" muffin I remember. That said they were soft and pillowy, and surprisingly decadent! Texture honestly could have been a number of things on my end, bake time, high humidity, "eyeballing", etc.
I might cut back on the sugar if (when) I make these again just so I feel a little less naughty eating one lol, but I definitely gotta try the other variations unchanged sometime.

So the one I linked above in my earlier commetn is the recipe I use now & it is much easier to understand & follow for a BASIC MUFFIN RECIPE - You can add in whatever you like to it same as this video demonstrates
This original recipe here though ---> www.gretchensveganbakery.com/vegan-muffin-recipe/
I just feel like was too confusing for many people so I actually made it private on my website & now just direct people to the other one above comment
But I have opened it back up for you to decide which you prefer

Off subject, can you do a cherry compote….or do you have one already on the blog? I couldn’t find it.
I’m planning on doing some cherry hand pies next week for a gathering but have seen some that use fresh, frozen and even canned cherries with different ratios of sugars and some having different additions.
Since I loveeee your apple pie filling, I trust that you’re cherry filling will be equally as delicious.
I’ll also be making these muffins for a get together next week.

Hey awesome! You can use cherries in place of the apple in that apple filling recipe!! ***I prefer frozen fruit whenever I make compotes, I find the moisture from the already broken down cell walls in the fruit really lends to the best juicy compotes and no water is needed to adjust consistency
Also- I have a close up view of making a basic strawberry compote here, so the concept is always the same no matter what fruit I use, I just taste to see if it needs sugar or not and watch to see if liquid is needed to help it all go.

As a previous bakery owner, have you ever considered opening a vegan bakery in your area? You don't even have to label it vegan, because people who aren't vegan stigmatize that word lol, love your videos, thanks for the amazing recipes.

I challenge you to make something without oil/butter/fat. Yes, no fat whatsoever. Vegan butter is made with oils, and all oils are very highly inflammatory, and that includes olive oils, coconut oil(and people think they're healthy) which makes everything and anything not healthy at all. I wonder if you can do it, we'll see!!!
