Fried green tomatoes are made using unripen tomatoes that are picked before turning ripe, the taste has slightly acidic taste and does not have the sweet taste of a ripe tomato, actually it would be very tasty fried and inserted into a full English breakfast. There plenty of online recipes for making fried green tomatoes to test out for yourselves , just takes a little prep-time but easy to made.

I was just going to say this. As someone who grew up in Brooklyn NY and lived there for 25 years and now has lived in S Florida for 23 years, I can safely say many of these dishes are enjoyed all around the country. Some are way different, in different parts of the country, yes. But most are literally just the dish shown here, perhaps with locally sourced ingredients instead etc. Chicken and dumplings were something I enjoyed my grandmother making for years, and she never even visited the south (but I can assure you, they were exactly how a Southerner would make them) until she retired and moved here to Florida. Chicken and waffles, I mean come on. Literally one of the best dishes imaginable, though I've seen it served with thick cut bacon and that just takes it to the next level. :D

Hush puppies come from old southern cooking. In plantations, the kitchen was an out building, in case there was a fire. The cooks, usually slaves, had to carry the food from the kitchen to the dining room. Plantations have lots of dogs and gather around and pester the cooks. One way to keep the dogs down was to feed them. The fatty dough balls did the trick hence, “Hush Puppies”.

Boiled peanuts are best when they are green, which means freshly harvested. It makes a big difference. Really enjoyed your mom being on the show. Chicken fried steak is a favorite in Alabama. Gizzards and liver are great together. My mom would fry the gizzards, put them in the pressure cooker for a bit and bake it oven with livers. GOOD food! It’s typically the black community that eats chitlins’ (chicken intestines) Mayo and fruit together is a great combination. A favorite in the south is a banana sandwich, which is made by putting mayo on the bread and slicing a banana to go between, or smearing peanut butter on the bread. Your mom is a great addition to the channel. I hope to see more of her! It's not exactly an American idea to be creative. It's just trial and error. When I make my mash, I like to add mashed or pureed roasted garlic or crumbled bacon or shredded cheddar cheese. It is the how much part that's the key. Chicken & waffles are great because waffles don't have to be sweet. They can be savory also. In fact, I saw a waffle that made out of premixed stuffing/dressing that we would use on Thanksgiving. I've seen and made macaroni & cheese with everything from bacon to shrimp/prawns and lobster. It's all goes by what you know. My only advice is if you're going to serve it to guests, make it for yourself first. Can you tell I love to cook? 😊

Pot pie is delicious, and can be easy to make. For a first timer, take a pound or less of chopped, cooked turkey or chicken, it doesn't matter if it's boiled, roasted, or grilled. Mix that with a can of condensed cream of chicken soup, maybe a splash of milk, some frozen mixed vegetables, like peas, corn, and carrots and season to taste. I like mine with lots of garlic and rosemary, some add onion or other herbs. Pour in your filling, seal and vent the crust, then bake on lowish heat until the crust browns.

Like so many wonderful dishes from all around the world, many of these Southern favorites were created out of poverty & necessity. People used what was readily available & cheap. They created delicious things that are now loved by everyone at all income levels. An example of such a food is sausage. It was created to use up every single scrap of an animal, including offal. It's all ground up & stuffed into intestines. Now, that was definitely created by people who couldn't afford to waste anything! But it's so good!

When I would visit my grandma in Oklahoma, she would wake up at the crack of dawn and roll out dough and make fresh biscuits and homemade sausage gravy, sausage, eggs, and bacon. I remember the smell and how amazing it was along with the smell of fresh coffee brewing. Miss those days!!

You pick the tomato off your plant when it is green and firm and yes they are on the sour side and delicious when fixed correctly. A special dish in spring.

My dad loved to experiment when he cooked. The rules- 1. Use good ingredients so the food will be good, the flavor may or may not be to your liking... 2. Write down what you do. 3 be honest about your experience. 4. Remember you have permission to request that item not be made again. 5. Make suggestions on improving the dish.
One of my favorite memories we were having a fish fry at the end of gardening season. Dad picked the final offerings from the garden, battered and fried as the sides... We discovered some surprises. Cucumbers and green beans were awesome where the bell peppers were not.
Try something different and find new favorites.

Fried green tomatoes are indeed tart, though not quite like a pickled gerkin. It's a great way to bring out the sugars in unripe tomato. That recipe is also used for yellow summer squash, though sliced thinner.

Fried green tomatoes are an end of season dish for us. We pick the last of the tart green tomatoes and fry them up. I serve it with a dill sauce. They are delicious.

If you ever make any kind of greens, add a spoon of sugar to take the bitterness out. When describing it to me , My Nana said " it takes the green out" in her beautiful southern accent.
Love the reaction video with your Mum !

To add a little context, many of the people living the Southern U.S. states were historically very poor, so many of the dishes were born out of using every edible plant and every part of an animal. Nothing went to waste. My mother grew up in Arkansas during the Depression (1920’s and early 1930’s) and ate dishes not mentioned in this video like Poke Salit, head cheese, etc. Green tomato dishes were derived to use the still growing tomatoes that wouldn’t ripen before the onset of colder weather. And actually the prolific frying of foods in the South was related to a way of food preservation. Fried foods survive longer I’m the heat than raw or boiled foods.

Okra is very much a vegetable. It's a kind of seed pod that's in the same family as hibiscus, mallow and cotton. They have a mild flavor, and along with frying them, they are used to make sauces and as an ingredient in some forms of gumbo.

Milli’s mom needs to try Scrapple . It’s actually made from pork scraps . Use Molasses for a topping along with southern biscuits or cornbread . She would love it

Biscuits are softer, flaky, and buttery. Scones are more dense and dry.
