    I'm a good jew, married to a great Scot. How do I spit a pig? It's a 40th with the other side of the family. What marinade should I have or is the cracking (Dry and salt) is what they truly want? 🤔 thx

      Sounds like a great party. You are on the right track with just the salt for a crispy skin. It does depend on the type of spit braai machine you will be using. If you have one that turns with a motor and you have enough time on the day the secret to crispy crackling and juicy meat is slow roasting over low heat. We do recommend cutting the skin before cooking as pig skin is tough. Cooked like this you wont need any marinade, but you can always add a mix on Nyama Braai and Nyama Kuiken sauce to some of the meat after it has been carved - www.nyamabraai.co.za .       We do a spit braai on open fire for fun Darren, when we work we use gas and cook more than 200 lambs a week so yes we are South African, when we play we play hard and when we work we work hard :-)
