Likert scale data is ordinal data. You cannot perform arithmetic operations on ordinal data and thus cannot calculate a mean or standard deviation. However, you can sum together the data from multiple Likert scale questions and then treat that sum as interval data. You can calculate a mean and standard deviation for interval data.
Assign the answer options numerical values, e.g., strongly disagree = 1, disagree = 2, neutral = 3, agree = 4, and strongly agree = 5. Then Add all scores together and divide by number of scores/questions to obtain mean.
