Cooking from Scratch | Pantry Challenge Week 1

  • Hey friend, week 1 of the #threeriverschallenge is finished. This week, and all month long, I am feeding my family using food that I already have on hand. Fruits and vegetables that I preserved from my garden, meat I have stored in my freezers, and pantry staples that I have will be what I use to create my meals this month. We will be relying on my from scratch cooking to get us through - creativity is going to be very important!

    Pie crust
    2 1/4 C flour
    1/2 tsp salt
    1 C butter, cold
    8-10 Tbsp ice water
    Pulse in food processor until dough forms, turn out to floured counter, knead until you have a soft dough, wrap in plastic wrap and chill.
    Place in ungreased pie dish, bake for 10 min @ 350. Then follow pot pie directions.
    Chicken Pot Pie
    1 C chopped onion, celery, carrots, potatoes, corn
    1 quart cooked chicken
    1 quart chicken broth
    1 stick butter
    1/4 C flour
    1/4 C cream
    Melt butter, add in celery, carrots, onion, lightly brown. Add flour to create roux. add in broth, and then all other ingredients. Simmer til desired thickness. Add filling into pie crust. Top with crust. Bake at 350 for 45 min.
    Yogurt
    1/2 gallon Fairlife Milk
    1 can sweetened condensed milk
    1 heaping tbsp of yogurt
    Add to instant pot and mix well, put on lid, yogurt function for 8 hours. Place yogurt in fridge overnight.
    Chicken Chimichangas
    4 chicken breast
    1 pint of salsa
    3 Tbsp taco seasoning ( • Homemade Christmas Gif... )
    Cook on low for 6 hours. Shred.
    Sourdough Tortillas
    1/2 C sourdough discard
    1/4 C avocado oil
    1/3 C water
    1 2/3 C flour
    1/2 tsp salt
    Mix wet ingredients, then add in dry ingredients and mix until dough forms. Let rest for 20 min, covered. Cut into 8 equal sized pieces and roll into tortillas. Cook in skillet on med heat until blistered on both sides.
    Add shredded cheese and chicken to cooked tortilla, roll into burrito, brush with oil, bake at 350 for 30 min until crispy.
    Mexican Rice
    2 C rice
    2 C water
    2 Tbsp avocado oil
    2 Tomato bouillon cubes
    1 tsp onion powder, garlic powder, cumin
    Instant pot, saute rice with oil until golden. Add all ingredients and use the rice function.
    White Chicken Chili
    2 C cooked, shredded chicken
    1 onion
    5 garlic cloves
    1 Tbsp oil
    2 cans white beans
    14oz chicken broth
    1 quart tomatoes
    2 Tbsp taco seasoning
    1 C sour cream
    1/2 C cream
    1/2 C corn
    Saute onions and garlic in oil. Add all other ingredients and simmer til ready
    Sweet Cornbread Pancakes
    3/4 C cornmeal
    1 C flour
    1/2 C sugar
    2 Tbsp honey
    2 tsp baking powder
    1/2 tsp salt
    1 stick melted butter
    1 C milk
    2 eggs
    Mix all ingredients, let rest 15 min, cook on griddle in pancake form.
    Banana Oatmeal Muffins
    1 1/2 C flour
    1 C oats
    1 1/2 tsp baking powder
    1 tsp cinnnamon
    1/2 tsp baking soda
    1/2 tsp salt
    3 bananas
    3/4 C milk
    1/2 C sugar
    1/3 C brown sugar
    1/3 C melted butter
    2 eggs
    2 tsp vanilla
    Mix all ingredients. Bake at 425 for 5 min, then turn the oven to 350 for 8-12 min.

    Asa 73 year old I'll tell you you do not want handles on your rolling pin. That way you only use your wrists to roll out dough. With no handles you can put your whole body behind the rolling pin. My grandma taught me this (she was born in 1890). She made 80 pies daily for her restaurant in the 1930s.

    Loved your video, just now subscribed, got the name from Kevin on Boring channel. I love his sweetheart and his Dad. I’m a grandmother and love to see that people still cook. I’m a country girl all my life and use to garden, canning and freezing. So look forward to watching you. Love because you are not rushing thru the recipes and are doing realistic things.

    You’re so funny! My mother raised four kids. I never once remember her worrying about what any one of cared about what she put on the table. Don’t get me wrong; she was a great from-scratch cook, but she never attempted to please any of us, much less all of us at once! …lol.

      Hey, sweet mama. Something that might help with his insomnia, check out baby meditation. Practice talking out a story with him where you go on a little adventure in the darkness in your mind; counting sheep, flying carpet, going to the zoo, etc... and have him tell you things he "sees", what color are the sheep? What animals do you see? What places can you see?, then as he gets used to it, tell him to say it quieter and quieter... then tell him to keep going but only in his mind. ❤ it works with settling them down.

    Love these videos so much! I feel like I’m always stuck In a rut when trying to figure out what to cook each night for dinner.
    I ,too, went through a phase where I made everything out of sourdough- one of my families favorites was grilled cheese with the sourdough bread. It was perfect for dipping in our favorite cup of soup.

    The memories of bread making came back to me after watching your video. A year ago we gave up all bread, pie crust, rolls, tortilla, and other items you make with the sour dough. I gave away my sour dough starter as well. We switched to eating a whole foods diet high in protein and the journey has been wonderful for health as well as weight loss. We do grow a massive veggie and fruit garden in our backyard as well as raise chickens, ducks and quail. I do buy the Aldi's Knock your socks off sprouted bread as it's a very clean ingredient bread. I keep a supply in the freezer for the bread craving or to make a sandwich.

    I've used both rolling pins with handles, and without. I love the one my daughter got me a few years ago, without handles. I used to end up not using the handles on my other ones, mainly because I'm 62, and my hands start to cramp and hurt badly, when I use the handles, or any peelers, etc. You may want to ask a friend who has a rolling pin with handles, to see if you like it better, before investing in one, or look at thrift stores for one, because they always seem to have them. It's a good idea to keep a list on paper, or in your phone, of items you'd like to find at thrift stores. It's fun to check off your list, knowing you didn't pay full price for things you want to try.
    Girl, you need aprons! I never wore one until I noticed I was always getting flour on my clothing. With you making sourdough bread, you'll be using flour a lot! It acts like glue, and can be hard to get out of your clothes, if it gets wet.
    I admire all you do, to make sure your family eats good, nutritious meals. They may not notice now, but they will remember all the effort you took to make sure they ate homegrown, home canned or frozen meals. I still remember, and am in awe, of all my mom did to grow, can, freeze, and make nutritious meals for 9 children, my dad, and my "nanny" (great grandmother), who broke her hip and moved in with us to be cared for. Her own children didn't do that! She recovered and flourished, and lived with us for years! My mom had her doing latch hook rugs, to keep her hands and mind busy! I have one of her larger rugs that I remember her making, when I was a young teen!
    I love that you have all your children help in the kitchen. I had my 2 girls and 2 boys help me, and now I have my grandchildren do the same. (It takes much longer to get things done, but they are learning, while doing something they enjoy)! My children learned so much about home economics, from being in, and helping in the kitchen. My oldest daughter won the baking contest at the fair, and my oldest son, won second place! I taught them to do laundry, and how to iron! These are skills that both boys and girls should be taught at home! My husband could barely boil water when we got married! Once they got into their young teens, I had them plan and "shop" for 1 meal a week. They needed to check if we had all the ingredients, and write a shopping list, for things we needed. I would take them to the grocery, and they would compare prices, look for sales, etc. These are real life skills they all use today with their families! We don't need to wait on our children, do their laundry, and end up sending them into the world, unprepared and unable to do household tasks! That's not love. Preparing them for a better future is love! You're doing an awesome job!

    I dont necessarily think that you need a new rolling pin. Just flour your pin, too, when rolling anything out and you’re going to love it more. ❤ First time finding your videos! So fun to see what others are making for dinner!! Thanks for sharing your fam with us! 😊

    I have a French style rolling pin with no handles. Mine tapers more at the end than yours. I got it for a gift and it’s made from a local wood worker. I love it. I had the handles style prior. The handles were clanky. Didn’t live that.
    Also make that white chicken chili in the crockpot. I use the rotisserie chicken from Costco when I make it and it being on low all day doesn’t hurt it all. Pretty hands off.

    Thank you for the video. Very nicely done. You know, you can always thicken your gravy MORE by adding cornstarch and water--even if it was originally made with a flour roux. I do it frequently and never have any taste or other problems. I really dislike a runny gravy with pot pies!

I have not seen one for larger flour tortillas, but have not looked hard. If your hubby is handy,, he could easily make one out of wood--just look for a wooden tortilla press online and follow the design--very basic!

    The handled rolling pins are amazing!!! Its what I use and seems like not as much work to me. Also mine is pretty heavy so it flattens much faster and thinner. Just my opinion. Loved the video!!!

    I have a rolling pin with handles, but I find myself not using the handles and rolling it with my hands on the pin itself. Go figure. As an aside, sometimes when I make rice for a Mexican-style meal, I'll take a jar of chunky salsa, drain it, add water to the liquid to bring it up to the amount I need to cook the rice, and add the liquid and the solids to the pot. It makes a nice salsa-flavored rice with veggie chunks in it.

    Hello, that was quite a wonderful week! I, too, made turkey pot pie for the first time that i can remember. My pie dough was a little thick but it was delicious! This is what i think about the rolling pin with handles. I think it would be something so wonderful to pass down to your kids! Maybe as a gift when they move out on their own, or as a shower gift when they get married. They will remember all the wonderful things that you made with it. Put it on your birthday or Christmas wish list! Maybe get your husband to inscribe something on the handle. Thank you for such a fantastic video!       I’ve gotten lazy in my old retired age… I process can stew bases with both chicken and beef. The bases have celery, carrots, potatoes and onions right in with the meat. I just dump, heat and thicken and right in my iron skillet, I’ll place canned biscuits on top. Like I said… lazy, but quick and delicious.

    Try making some of your cowboy candy with red jalapeño peppers with the seeds removed. It’s milder and I can handle the heat much better than the regular batch I make for my husband.

    Hi found your channel through three rivers challenge! Im from over in England and we don’t have cornbread with our chilli, I usually do it on rice or a baked potato and with leftovers I usually mix with rice and then roll up in a tortilla. I’m like you I don’t like spicy food but my husband is the complete opposite. Some fabulous ideas to try so thank you, looking forward to future recipes from you 😊

    I have the French rolling pin too. This year for Christmas, I asked for an antique rolling pin with handles and I love it. It’s much easier to use in my opinion.

    My dad was the cook in our family but my mom was the baker
    I was 8 Years old before I had store bought bread.
    I empowered my niece to cook the Thanksgiving turkey when she was 8 years old .she is in her 30 now

    I have a thinner no handle rolling pin and a handle one also a marble one .. I like the no handle one best but the marble one is good when you need to dough colder

    My preference is the non handle rolling pin. I’ve tried both but I can control the pressure better on a rolling pin without handles. Everything look yummy.

    I have my grandma’s rolling pin… with handles and love it !!!
    I bought a French version and did not like it… so I have it to a new home ….
    Easier to control and use the handle version!!

    Keep your French rolling pin. I use a very thin French tapered pin. Instead, use the money to buy a tortilla press, especially if you eat tortillas often and have a family. Take your tiny dough ball, put it in the press, done. Game changer.

    I havveh bot,h rolling pins. Most of t,heh time I grab the one wit,shout handles. I, too, got the handle one for a wedding shower gift back in 1969. It depends on what I am going to use them for that decides which I will use.

    I have a rolling pin with handles and I rarely use the handles I much prefer to push on the roller instead. 🙂

    🙂 Be careful with putting a hot Dutch oven on a cool/cold glass stove top. 🙂 Just place a hot pad down first to avoid thermal shock. Have a nice day.

    I bought a rolling pin like yours but thinner and i will never go back. I had used the regular one for 30 years and i wish i had converted years ago.

    I have a rolling pin with handles. I often find myself using mine like you're doing in this video. Personally, I think handles are overrated 😂. Also, I agree chocolate chip sourdough is not good. No one in my family enjoyed it.

    handled rolling pin is easier. I have a small, handmade (Amish) without handles and it has its place on certain things.

      It's in the description, but it's just 1/2 gallon of Fairlife milk, 1 can of sweetened condensed milk, and a heaping Tbsp of yogurt. Mix well and use the yogurt function on the instant pot. Refrigerate overnight and it's ready to go!

    My rolling pin was passed down , its marble and heavy, I use my old wooden one the most,if I’m not to bold an apron would save your clothes it did mine👍

    Handles are overrated unless you get a high end one where it’s all one piece. If it’s attached handles, they get loose over time and just end up spinning

    I don’t know about everywhere but here in Texas we call your cornbread pancakes “hoe cakes”. I’m sure there’s some sort of story behind the name, but I don’t know what it is. I just know that they are delicious!

    I’ve never heard of putting sweetened condensed milk in the yogurt mix. 😮

      Makes it so creamy and delicious! Occasionally I just make plain yogurt and sweeten with honey or jam, but we all like it best with the sweetened condensed milk!

      @@6Heartson6Acres and it’s OK to put it in before it ferments? I’ve only ever made very basic homemade yogurt. I ferment from 36 to 48 hours because I like to maximize the bacteria, but I’ve never put anything in it before I was done fermenting. is there anything special you have to do to make sure it goes through the process properly?
