When I take this to pot-luck fiestas, I grill the meat over coals before proceeding to the braising step. I also use beer to deglaze the pan. I know many people have issues with the alcohol but it actually cooks off. As you say: Layers of flavor with more layers of flavor. You recipe and presentation are spot on. If you can't find the packets of beef bouillon, order on Amazon. It is far superior to the cubes. And while you're at it, order the chicken packets of bouillon as well. Zoe is right about the packets. Love her recipes!

I recently married a Colombian who is always demanding that I make him traditional Cuban dishes but since I grew up on Olive Garden and Burger King I'm always searching for new ideas.. going to try this tomorrow thanks!
