    Wow, I am really shocked at all the hateful, disrespectful comments. Recipes have variations, he mentioned he is doing a Caribbean version, so he is using other ingredients. The man is sharing his knowledge, he is an older person, have respect. Move on to other videos, but don't insult people for sharing a recipe.

    Nicely done! I grew up eating this. I need to learn to make it so I'm gland I found your channel. The yellow rice I make it exactly like yours and we call it "arroz con nada" but the sofrito gives it a tremendous flavor. Thanks for sharing your recipe. WEPA!

    Awesome recipe! By the way, if you can’t find culantro in your area, cut off the stems from your cilantro, tie them with a piece of twine, ala bouquet garni, and cook them in the stock. Use the cilantro leaves in the final stages of cooking.

    Maduros is a favourite of our too! Like um very ripe but not black. Of course I’ve not found much difference in flavour. Yellow or black they are perfectly sweet.

    I was taught to fry plantains 1x. Take them out. Mash each one, refry again ..take out..enjoy. Everyone cooks different.

    Between the 2 Cuban "mamis" (friends' mothers) & one Puerto Rican "mami" who introduced me to Cuban and Puerto Rican cuisine, not ONE of them ever used Cilantro in their ropa vieja, arroz con pollo or guisos. How come? They came from (originally) Matanzas & Habana in Cuba and Guayanabo in Puerto Rico so they cooked the "real thing" but neither of them ever used cilantro.

      Cubans dont typically use cilantro in their cooking.

      Well the title of the video does not say Cuban Rosa Veja. It just says Ropa Veja maybe that’s why....mind you I fast forward thou lots of parts of the video. But I would normally make it with cilantro too because In PR cooking it’s part of the sofrito. Is culantro part of a authentic Ropa Veja?

      Maybe "he" likes cilantro. If you don't like cilantro omit it. Not all chefs use the exact same ingredients for a recipe. Happy cooking!

      barrel1808 it's "recado " or recao in slang. Basically a mixture of veggies like cilantro, peppers, celery, garlic, onions etc

      I believe it's culantro in English. It adds to the taste but not absolutely necessary if u can't find it.

      In Puerto Rico we call "Recao" to the long leaf Cilantro, you saw those long green leaves, it has a more pungent flavor than the cilantro you know wich comes in a bunch, the cilantro you know has smaller leaves and looks like parsley. We use both to make our sofrito.

    laughing watching this guy first off I am 59 years old today I have never seen my mother or any relative making any kind of Cuban food using first off "Celery" second using worcestershire sauce third Cilantro so having said this this guy and meathead! sofrito is easy Pepper, Garlic, Oregano, Parsley, Onion, Tomato, Salt, vegetable oil I like to add olives and I use Olive oil instead of vegetable oil. My mom house was never with out onions green olives tomatoes garlic green peppers she could make a meal in 30 minutes with nothing. worcestershire sauce really?

      For Cuban rice, it's just easy to use the Vigo brand. Everything is already there.
