EVERY single one prior pre cooks the meatballs... my italian nonnine would only cook in the sauce and makes the softest most delicious meatballs ever! My fathers also a master chef but we all defer to hers lol. He does the same way in the resturant but adds a few other meats to the sauce. He loves recreating old italian peasant dishes. I make a big pot of sauce then roll and drop the meatballs in the pot and let them cook. I Let them cool then slice and layer in my lasagna. An Italian lady from NYC taught me this recipe 35 yrs ago. Always perfect!

Couldn’t wait any longer, made this today. Changed some ingredients etc but that’s not the point. You used a panade, I have never before, I did this time. Excellent results. Slow cooked in the sauce until meatballs were 145° in the center. I don’t think anyone wants pink in their meatballs. Hamburger, different story. The meatballs are tender and juicy and the sauce is fantastic, clearly having benefitted from the meat. Very, very well done Nic. I’m wondering if that’s short for Nicole. Happy New Year to you!

I done this today. Was fine. I added a drizzle of fish sauce, a large pinch of sugar and ground cumin though. Adding wet bread to the balls is a neat idea though

The meatballs and sauce look gorgeous without searing the meatballs in a frying pan.......Is there a difference in searing and not searing......My local Italian grocer and restaurant always sear the meatballs and they taste wonderful.......They cook all the sausages and meatballs in the sauce and ladle into containers for plain sauce buyers.......It's the only sauce I'll buy.....
I like the recipe but I don't like the hamburger put in raw because it leaves too much fat I think I would have precluded a little bit Sprouts in the oven just the most off the fat
Thank you. From what I have seen when I cook too much fat depends on the type of mince you use and how much oil is used not because of cooking like this.

What about the Italian seasoning the the oregano and basil ??
In this recipe they are not required. But if you like your meatballs that way add them.

I would panfry the meatballs first before adding to the sauce it adds extra flavour.
