Ozi,i have never seen ukwa prepared this way oh. It's one of my favourite food.I still have some. I just use palm oil,salt and pepper. Maybe add sweet corn since my daughter likes it.we drink the water too. I have seen something today. ISSORITE
If you're extracting the water, then you don't cook it that way... you cook it without any ingredients first after the ukwa is soft, extract the water then put your oil, paper and pinch of salt and is done.
