It's in the houston TX area. Reason why is because you have two options on how you can get your brisket. Lean or Moist. Always get the moist because they cut it where you get some of the meat with the fat. Highly recommend for people who had bad experience with brisket because most peoples experience i've seen is due to the fact that if brisket doesn't have enough fat. They seem to dislike brisket or not care for it as much because it seems to be dry or bland. Rules I follow for great Texas BBQ 1. Really good bbq do not open 7 days a week usually 6 to 4 days a week. There are some exceptions 2. Always go before 12:30PM because usually really good BBQ is sold out of most of the good stuff. 3.Really good Texas BBQ doesn’t require sauce. Great to have on the side but the meat is usually great on it's own.

Was in Lisbon at a French bistro that had the best pulled pork sandwich I've ever had. Better than anything from Texas. They knew exactly how much sauce to add, and the right type of heat, and sweatness. The slaw was a kimchi napa valley slaw. Insane. These dude's spent a good time in the South and perfected it back home.
Texas BBQ recipes are amazing and what make it even better the meat quality in France or certain country in Europe is much better because commercially most of the cows are grass fed. This will affect the meat taste
