Jamie's fumbling at 17:00 followed immediately by Ebber's attempting to help (only to be ignored for booze) followed by the absolute child like "Yeaaaahhh" from Mike has got to be my new favorite moment from the team.

I went to culinary school years ago, and while I've retained a fair bit of knowledge, I can understand the struggle. I don't currently work in the restaurant industry, but that doesn't mean I can't still cook up some wonderful dishes. One of the reasons I love this channel is because I always find new learning opportunities.
That said, I've done most of the techniques listed. A simple compound butter is nice, but an herb infused oil cooked down with some shallots and elephant garlic really give you other options. For example, you could use it as part of a jus gras.
I might have gone that route for that very purpose. Not only is the oil a wonderful finisher, but I love that you can incorporate it in other things.

I have a toddler, so I usually have fruit left over. I have gotten into the habit of making a bread/cake out of it. Like banana bread, but with different fruit. So far I have done banana, apple and pear loafs. I also bake muffins with the smaller fruit like raspberries and blueberries. It keeps about a week in the fridge, but it's usually eaten up within a few days as a healthier sweet option in the house.

Mike seriously deserved the Upcycling Badge!! The only thing "wrong" with his Okonomiyaki (Economiyaki 😉) was that the underside had slightly more dextrinization or was more dextrinized (Ben, you're welcome 😁) than the other. Mike may have mislabeled his dish by calling it an Okonomiyaki, but Jamie did the same thing by calling his dish a Crumble. Ben said Mike's was "not thick enough to be an Okonomiyaki or thin enough to be a pancake". But, according to Ben, the crew still "thought it was really good and were happy to eat it".

The guys make fun of him sometimes for his fumbling and panic, but he regularly makes good food, usually stays pretty simple, and knows how to use cheap ingredients to their upmost potential.
I would generally eat anything Jamie made. Barry sometimes tries to hard to be fancy and has over-complicated things, and Mike is either amazing or a disaster. XD I love them all, but I would say Jamie is definitely the most consistent.

In Jamie's defence I work in a kitchen at a retreat house catering for 30-70 guests each week and one of our dessert recipes that is always popular is 'Scanian apple pie' a Swedish recipe taught to us by a previous team member who grew up in northern Sweden. It is apple slices like the bottom of a crumble but topped with a butter, sugar and oats mixture that behaves very similarly to Jamie's failed crumble topping.

Oh maybe Mike should have got a brownie point for continuity? He was the only one to link his dishes with the oil he made for the first challenge being used on his up-cycled dish.
Some interesting choices made though & good to see more food/money saving tips coming to the fore. Plus they can be delicious treats that really make a dish.. like compound butter.

Great video as always! I'd love to see another leftovers battle, but this time with leftover cooked meals. Like, a little bit of leftover chicken, or pasta dish, or rice dish, turned into a different meal. For those of us who cook too much at a time and get tired of it before it's finished.
Also, did you know okonomiyaki literally translated to "cooked how you like it"?

Loving all these food waste themed challenges, but I think we need to up the difficulty. I rarely have a lovely fresh ripe mango and fennel bulb and heritage carrots knocking about needing to be used up 😄
Even if we plan our meals perfectly life can still throw a curveball and we end up with ingredients turning dry or squidgy or funky etc, but a lot of the time they're still edible! Let's save them from the landfill and save some pennies while we're at it!
So how about a dodgy remnants of the fridge kind of challenge? As an example, my fridge currently has a few stalks of limp celery, half of an onion that's drying out, half a cucumber, a few spring onions, and 3 slices of chorizo that are also turning a bit dry. I'm using that lot plus a few store cupboard ingredients to make baked Cajun rice (using the celery and onion, I'll probably serve some cucumber slices on the side too), sriracha noodle salad (using the cucumber and spring onions), and quick homemade flatbread a bit like a pizza with chorizo and a poached egg (obviously using the chorizo and any remaining spring onions).

Love the idea of preserving things... you can kick it up a knodge by going 1 by 1 and doing ONE single preserving method and rotating until 2 of them dont know what else to do. And also applauds for Mike that flipping 10/10

I've watched this one several times. It may be my favorite SORTED Food video!! That part where Jamie is trying to work out how to deal with his dessert - with Mike and Baz absolutely losing it - is one of the funniest bits on the channel! Well done!!!

The finale needs to be a complete free for all. The normals have absolutely free reign of whatever dish they want to make - no specific cuisine, ingredient, technique etc. They can attempt as many remaining badges as they like but like always, have them removed if they fail a skill they already have.
It's quite rare we get to see a video of the guys just completely free from any kind of restraint and it'd be a nice way to see how far they've come.

This skills badge battle was as always an exceptional video to watch, hilarious as usual seeing the normals panic under stressful situations, and the challenges were planned perfectly! I do think the challenges could’ve been slightly better though, for example, the first challenge could’ve required them all to go twice to eliminate the advantage Barry had, perhaps by mirroring the order they competed in so Baz went last with less preservation methods and ingredients available to him because he went first with free choice of ingredients to use and a full selection of techniques to choose from! It was brilliant that they were forced to use their preserved ingredients in the first challenge in a later challenge, but I do wonder whether it would’ve been more interesting if they could’ve chosen between two different ingredients which would’ve provided different paths for their improvised dishes
