    Recipe from her notepad for 1 batch :)
    4 lbs beans (great northern, pinto or navy)
    2 qts tomato juice
    1 C. chopped onion
    2 C. brown sugar
    1/2 C. molasses
    2 T. AC vinegar
    1 T. worcestershire
    2 t. spicy brown mustard
    liquid smoke or smokey dry rub
    1 t. salt
    2 t. pepper
    Soak beans overnight. Drain.
    (Next day) Add water to cover beans (water should be over beans 2"). Bring to boil for 2 min. Remove from heat. Let soak for 1 hour.
    Drain.
    Add water to cover beans (water should be over beans 2"). Bring to boil; reduce to a gentle boil. Cover & let gently boil for 30 min.
    Fill jars 3/4 way full with beans. Add sauce to 1" headspace. Pressure can pints 75 min. Quarts 90 min.
    I am excited to try this recipe and had some questions so I watched and compared to the notepad! THANK YOU!! Can't wait to try them as I have just used my last jar of a more intense canned baked beans recipe!! :) Thank You for sharing your method!

    Just for you know, this is a American company but the lids are manufactured in China....I've used these for a year now and I haven't had not one failure with them. I'm quite happy with them. I prefer them over the Ball lids! I haven't tried baked beans yet. They sound delish.

    I can’t wait to make these beans. My mother never canned beans that I am aware of but for any special company or holiday meal, she always had beans baking in the oven. I loved them. I am in my 80’s and hate to admit it but have never made baked beans canned or otherwise. However, I do like Bushes beans. I have to check to see if I have everything. I have a lot of canned tomatoes. I wonder if I can use two quarts blended or would tomato juice from store be better?

    I'm a new canner...what is "density issues"?

    • @DianeTheCanningNana
      @DianeTheCanningNana  2 ปีที่แล้ว +4

      🤗💜 Certain foods are too dense for the heat to penetrate through to the center long enough for the entire Canning process. If the food doesn't reach and isn't kept at the correct temperature the bacteria will not be killed off in the food. Food like Pasta, Rice,Noodles, Purees have Density issues and should Not be Canned

    Look amazing. I am confused on the amount of brown sugar. You said 2 cups per 4 lbs beans. You doubled the recipe for 8 lbs beans but you only have 2 cups of brown sugar in the measuring cup. Shouldn't the brown sugar then be one cup per 4 lbs of beans. That part was confusing! Could you please clarify? Good instructions on the rest of the video. Pretty straight forward except for the brown sugar.

    My baked beans recipe is a little different but I have another batch of navy beans that I will process and use your recipe with the tomato juice. We love Bush baked beans so if your recipe rivals theirs I will definitely be using it. Is your recipe in the Ball book or USDA book??? Thanks for all the safety tips along the way!!! ❤️😱

      Absolutely! The beans cook in the Jar, expand and thicken nicely. You get DOUBLE the beans in a pints jar then you do in a 16 oz store bought can!

    I've often found pressure canning anything with sugar that it often burns and gives the recipe a bad taste. You are putting a fair amount of sugar in this recipe, how did it turn out after canning, any sugar burn flavor? It would have been nice since this is a recipe you've never used before to have tasted them on video and give us a description, too. You soak the beans all night AND do the quick soak method also?

    • @DianeTheCanningNana
      @DianeTheCanningNana  2 ปีที่แล้ว +1

      I have Never had a burnt taste in any canned food. Maybe you are processing at too high a temperature, heat wise?
      I soaked the beans and then blended flavors by hearing, not quick soak. You can Either quick soak OR soak overnight, no need to do both.

    • @DianeTheCanningNana
      @DianeTheCanningNana  2 ปีที่แล้ว +2

      Also What I showed 2 cups of Brown sugar was for 8 lbs of beans. Not a lot. You Will get a " burnt" flavor if using White sugar. I never can using white sugar

    • @eckankar7756
      @eckankar7756 2 ปีที่แล้ว +4

      @@DianeTheCanningNana Per your video you said you soaked the beans over night, then covered with water and brought to a boil for 2 minutes, let set for an hour, then drain, return to pot, add more water and boiled and cooked for 30 minutes. That's both over night soak and quick soak methods.
      Several canning groups also note that brown sugar will burn, I've never tried white sugar in beans but brown sugar is just white sugar and molasses. Sugar burns at 350 degrees way higher than pressure canning temperature. The Ball site used to have a BBQ pulled pork recipe with brown sugar and had so many comments of the burn flavor of the sugar, back in the day when you could comment. The recipe was pulled from the site. Oh well.

    • @DianeTheCanningNana
      @DianeTheCanningNana  2 ปีที่แล้ว +2

      This recipe comes out absolutely Perfectly. No " burnt" flavor whatsoever. Most of the Facebook groups are not experienced Canners. That is one of the reasons we have a Good Circle of Canners here in this community.

    I am trying to find out if my beans I canned last night will be ok or should I throw them out. I did quarts of pinto beans. I soaked in vinegar water for a few hours then drained and rinsed and refilled the pot and cooked for 30 minutes. Made my sauce and put in the jars. I only filled about 3/4 full. I figured they would swell. It was like 2-3 inches head space. They were done in sauce so now are they going to be ok to use or should I discard them. Someone said to recook and reseal again. I am not doing that. I don't understand chicken has so many inches of head space so why would the beans not be safe? Help!
