Man I love your videos and have book marked you for a big batch of venison sausage I am getting ready to make. But I swear I could smell that shad here at my house still on my boat. I have never ever heard of eating them. We use them for small mouth and big big catfish.
I smoke and can shad too, my wife likes to equal parts water and Sriracha sauce and add a few tablespoons of that mixture to the jars before pressure canning.
Great video thank you for the effort! I'll be heading out tomorrow for shad. I used to give them away or use them for bait but I can't wait to try this!
Thank for posting this video! I was able to get some shad ready for the canner by following your instructions and demonstration. It really helped. I mangled the first 2, but the third looked better, and it improved with each one. Yours look a LOT better than mine did.. I only stabbed myself with the knife once.
Hello age of Anderson. I've been using shad for crab and halibut bait for years. I tasted shad meat its really good. Even though they stink really bad! I've attempted to debone them, definitely an acquired skill. Just need to find a way around the bones. I'm gonna try the Skinned/smoked and canning option. Thanks, JV. Hope to reply back with results in the next couple weeks.

Nice! I made a tomato curry style last year.

Excelent video and topic.
I've even pressure cooked sucker fish then smoked and it just tasted wonderful.

Would you use the same type of process for trout?
100%
Can't beat the Gypsy Jazz for food preparation.
Great video, Andy!
Great video!
Did you add any liquid to the jars, or just pack the fish in?
No liquid, there is plenty of fat in the shad. Thanks for watching!

Wow! Really good video. Would like to see you eating and your opinion of taste and bone factor? Thanks
Thanks for watching! The taste is like smoked sardine or kippered snacks, and the bones are non-existent after the canning process.
