I have a bunch of bags of tomatoes in my freezers too that I need to cook and can. I think I’ll do mine like Ruthann Zimmerman does, straining the tomatoes after they thaw and before they’re cooked. I have a vintage food mill like yours, only with a red knob and handle. I just used it a few days ago. If I have a bigger amount to strain, like I just did with pumpkin, I’d rather use my Victorio strainer. It’s a bigger mess, but it takes a lot less time and effort(except for cleanup! 😊). I pressure can my marinara instead of adding lemon juice, as I don’t care for the taste. I love your rolling pin rack, did you make it? I think I’ll try to make one like it.
I think next time I make my sauce I’ll do the same and pressure can it, i think like you I’d enjoy the taste better. And yes my husband made the rolling pin rack with an old coke crate and some clothes hooks. I use all those rolling pins so i needed them accessible. 😊
@sparkmanhomestead Thanks for replying to my question! I have some old soda crates, some of which are in poor condition, so I could sacrifice one. I think that rack is really cute and a good idea. I have probably four or five rolling pins I was thinking of getting rid of, since I only use one, but I hesitated because I like them. This will get them out of the way, but I can still enjoy them. No, i don’t think i do. Next year I’ll make one or maybe spring if we run out of it.
!2 pounds of fresh tomatoes weighs the same as 12 pounds of frozen.
