I haven't yet seen any evidence to suggest that the reason she was paid less is because she is black.

Last time I cried about a person I didn't know was June 8th, 2018 - the day Anthony Bourdain died. Today I cried for the first time since because Sohla deserves respect and love, and she is not getting it. It's heartbreaking. Please be fair to her. She has a kind soul.

FYI Dumplings freeze very easily. First freeze them on sheet trays and then move to a ziploc bag and they stay forever. I made a bunch of dumplings at the beginning of lockdown and now get to enjoy them whenever I feel like.
This. I was always worried about freezing dumplings I only found out about this recently. I've made pork steam buns (steamed then frozen), korean pork and tofu dumplings and Ham Sui Gok or fried crescent dumplings and tonight I'm trying to make Har Gow with coriander. The Ham Sui Gok I was worried wouldn't freeze well raw because of the weird texture of the dough but it worked and they fried up perfectly.
There's a great place in Toronto called Dumpling House and as the name suggests, their whole menu is dumplings. The first time I went there was the first time I ever had skirted dumplings. Made the mistake of ordering a bunch thinking each order was going to be 3 or 4 dumplings based on previous dumpling orders at other places, turns out they are like a whole sheet pan of dumplings skirted together per each order. Changed my life for the better.

i literally JUST made dumplings for the second time in my life two hours ago and I can confirm: Ham's method is a lot easier for newbies. If all else fails just pinch all the life AHEM air bubbles out of them to seal. Sohla's look like dumplings, mine look like golf balls HA
As a Chinese, I'm so impressed by Sohla's skill. This type of dumplings is called Guo Tie (锅贴) in Chinese. And the "skirt" she was talking about has a specific term, we call it Xue Hua Guo Tie(雪花锅贴), translated to snow flake dumpling. It's very easy to mess up, either the proportion of the imgridents or the amount of flour water. The skirt or snow flake turns out to be beatiful.

Last time I cried about a person I didn't know was June 8th, 2018 - the day Anthony Bourdain died. Today I cried for the first time since because Sohla deserves respect and love, and she is not getting it. It's heartbreaking. Please be fair to her. She has a kind soul.
I like Sohla's cooking. She's the most innovative and risk-taking of BA's chefs.
Yeah, I'd love to know more about her culinary background and personal heritage - she brings in so many different inspirations and tries so many things. Her videos are always great, and even ones like this one where I'm like "oh I know how to do dumplings" - the skirt slurry? Never seen that before and now I'm going to need to try it.
Can confirm, the skirt on the potsticker is unorthodox.
the skirt technique is usually used for 生煎包 and not dumplings like these, so she didn't 'invent' that method

FYI Dumplings freeze very easily. First freeze them on sheet trays and then move to a ziploc bag and they stay forever. I made a bunch of dumplings at the beginning of lockdown and now get to enjoy them whenever I feel like.
This. I was always worried about freezing dumplings I only found out about this recently. I've made pork steam buns (steamed then frozen), korean pork and tofu dumplings and Ham Sui Gok or fried crescent dumplings and tonight I'm trying to make Har Gow with coriander. The Ham Sui Gok I was worried wouldn't freeze well raw because of the weird texture of the dough but it worked and they fried up perfectly.

Really? I thought it was quite common... well, probably because I’m Chinese (by the way, it’s not just a Taiwanese thing).
There's a great place in Toronto called Dumpling House and as the name suggests, their whole menu is dumplings. The first time I went there was the first time I ever had skirted dumplings. Made the mistake of ordering a bunch thinking each order was going to be 3 or 4 dumplings based on previous dumpling orders at other places, turns out they are like a whole sheet pan of dumplings skirted together per each order. Changed my life for the better.

The vids by "Chinese Cooking Demystified" or "Souped Up" for example are way more complete and knowledgeable on dumplings.

@@emboe001 She gets paid as an associate editor, which is only 50k a year (in NYC that's barely poverty line). She doesn't get any additional compensation for video appearances while other on-screen (who happen to be white) are compensated.

i literally JUST made dumplings for the second time in my life two hours ago and I can confirm: Ham's method is a lot easier for newbies. If all else fails just pinch all the life AHEM air bubbles out of them to seal. Sohla's look like dumplings, mine look like golf balls HA

As a Chinese, I'm so impressed by Sohla's skill. This type of dumplings is called Guo Tie (锅贴) in Chinese. And the "skirt" she was talking about has a specific term, we call it Xue Hua Guo Tie(雪花锅贴), translated to snow flake dumpling. It's very easy to mess up, either the proportion of the imgridents or the amount of flour water. The skirt or snow flake turns out to be beatiful.
