Double Chocolate Fudge Cake

  • Double Chocolate Fudge Cake
    Prep Time: 45 minutes
    Bake Time: 70 minutes
    Makes: 1 cake
    Ingredients:
    (for the frosting)
    1 cup 70% dark chocolate chips
    3 cups + 2 T powdered sugar
    1 T sugar
    ¼ cup + 1 T potato starch
    ¾ cup coco powder
    ¾ tsp fine salt
    2 tsp vanilla extract
    2 ¼ cups cold water
    6 T unsalted butter, cold
    (for the cake)
    3 cups whole milk
    1 T distilled white vinegar
    3 cups AP flour (king Arthur)
    2 Cups sugar
    1 cup coco powder
    1 T baking soda
    1 tsp baking powder
    2 tsp fine salt
    3 large eggs
    1 ½ cups avocado oil
    1 T vanilla extract
    Preparation:
    1) In a mixing bowl, stir together the powdered sugar, coco powder, sugar, potato starch and salt, then stir in the cold water until incorporated, then use a whisk to stir out any lumps. Transfer to a large saucepot.
    2) Heat mixture over medium heat, stirring often, until it just thickens, then remove from heat and stir in the chocolate. Stir occasionally, until fully melted, then stir in the cold butter and vanilla until incorporated. Set aside to cool.
    3) Preheat oven to 315 deg. F and spray two, 8-inch cake pans with cooking spray.
    4) Add all dry ingredients to a large mixing bowl and stir to combine.
    5) Add all wet ingredients and whisk to form a thin batter. Divide batter evenly between prepared pans and bake, 70-75 minutes, until firm to the center and a toothpick comes out clean.
    6) Let cakes cool completely in the pans before turning them out onto a cutting board and slicing in half, length-wise, with a serrated knife.
    7) Spread an even layer of frosting on top of one piece of cake, stack another piece on top and top it with another layer of frosting. Repeat until you have all four layers stacked with frosting in-between.
    8) Finish the top and sides of the cake with the rest of the frosting, as shown in video.

    That looks amazing. Any way that you can give us the measurements for a smaller size cake. Like for 4 people

    Is there an option to substitute the powdered sugar? My kiddo doesn’t react well to cane or corn sugars. We use honey, maple and coconut sugars usually but I haven’t figured out frosting yet

      Frosting is a tough one, those substitutions wouldn’t work for this style frosting, but a buttercream frosting made with butter and maple syrup might be the way to go for you
