Get ready ! This recipe is time consuming but worth it !!
Vanilla Cream Filling
1 c sugar
5 T flour
1/4 tsp salt
Put these ingredients in a saucepan.
Blend above and slowly adding 1 c of milk over medium heat. Make sure that filling is thickened...it will take awhile to whisk to this point...leaving back of spoon coated. Place in bowl and let cool to room temperature.
While filling is cooling, make the cake
Preheat oven to 350 degrees'1-3/4 c flour
1 c brown sugar
1 c sugar
3/4 c cocoa
1-1/2 tsp soda
3/4 tsp salt
1/2 c melted unsalted butter
1/2 c oil
Mix altogether and add:
Room temperature 2 whole eggs and 1 egg yolk
1 c room temperature buttermilk
1/2 c steaming hot water (optional coffee)
Bake 33-35 minutes in greased 8 inch circular pans with parchment lined bottoms
While baking cakes...prepare ganache frosting
8 oz semisweet chocolate chips
1 c heavy cream
Microwave choc and cream at 30 second intervals until melted...do not boil or burn and let cool.
Take 1 c or 2 sticks of unsweetened butter at room temp and beat until light and creamy. Add cream filling mixture to butter one Tablespoon at a time and the then beat on low and turning up to high speed...add 1 tsp vanilla and blend. This should make filling firm...place in refrigerator for 15 minutes to stiffen alittle more.
Make sure cakes are fully cooled and parchment is off of the bottoms. Start assembling.
First cake layer on a plate and place firm cream filling on top...place all of it on it. Place the other cake round on top and smooth on ganache on top and around sides. Place in fridge again and then the ganache to firm up....take out and serve....out of this world good especially if you are a chocoholic !! ENNNNJJJJOOOYYYYY !!!
