How to Cook PATATIM with Artechiok

  • 500g pata (pig), light soy sauce, bay leaves, 2 tsp. Brown sugar, 2 Tbspn. Granulated taste enhancer, olive oil, garlic, onion bulb, whole pepper corn, 4 cups water, 1 Tbspn. Sesame oil, 1 Artechiok and salt to taste.
    PROCEDURE:
    1. Boil 5 mins the meat to eleminate some dirt.
    2. Saute garlic and onion bulb, then add the pata meat. Fry little bit the add white wine and let evaporate the alcohol of wine. Add taste enhancer, pepper corn, light soy sauce, brown sugar and bay leaves. Simmer for 40 mins. Add Artechioks and simmer again, after 1 hr, our PATATIM is ready to serve.
