I don't get this: in the first hand, 3,8 and Q of spades were folded, still they were shown as outs in the end. Why are the preflop folded cards are not taken into account when the equities are calculated?

Can someone explain to me why Carlos is drawing dead after the turn? He can still draw a King and have top set no?

Top set is when you have a pair in your hand like AA and the flop is A 6 7 that’s top set
He was drawing dead because Shawn has middle set and would win with a full house if a King comes on the river Carlos would only have Three of a kind
