likewise for the eggs- lots of japanese cuisine incorporates raw eggs, but you're never gonna get salmonella from them. they have a machine that destroys all the bacteria on the eggs, so they're safe to eat raw!
The food looks amazing, but I'm always impressed by the speed and efficiency of their cooking. The other amazing thing are the prices of these set meals. You would never see anything of this quality at these prices in most western countries.
It's really hard to accept eating out in the US after you go overseas. We really are nickel and dimed to death for much much worse food here in the US. AND you are expected to pay the restaurants' employees' salaries for them on top of it all.
I lived in Japan for a while and now back in the UK. I really overlooked how good the quality, price, and quantity was in Japan. Wish we had this standard abroad, too.

Right now in HK, the only chefs left are waiters who ended up with the job after all the head chefs left. And whatever managed to spring up and hone their skills after big opening of chef vacancies also left.

In the U.S., you are expected to tip people even if they did not go above and beyond which makes the meal even more expensive. I was concerned the entire time when he cut the fried chicken piece in half and it looked raw in the inside 😅
I assumed they were blanching the chicken in large batches so they only need to do the final fry to order
If you didn't' see it, it's fried again and wok tossed -before serving to the customers.

此方の、投稿の1年後に観させて頂きましたが、店主さんの、創業70年の歴史が素晴らしいですね。仕込みから鶏の唐揚げ、青唐辛子を炒めて、提供とっても美味しそうですね。沢山のお客さんが来られる中華料理屋さんですね。

大都市のお店とは言ってもこの規模のお店でランチの唐揚げ定だけで100食は凄いですね。その唐揚げも肉1日寝かせ、大量の油と超火力で二度揚げ+炒めの仕上げと家庭ではまず真似できない調理されてるからそれだけ繁盛してるんでしょうね。
