    Oops! Dropped a sheet metal screw in the mushrooms. The operators should have completely cleared the table knowing they were getting service work done. The city I live in regularly issues fines and closures for “inadequate protection of food during maintenance”. However as far as your work goes; I share your desire and drive to make things right. Used to do the same at customer prems doing telecom work all the time. Fixed all sorts of messes, some outside my scope.
    Cost me more time and a few extra parts but in the end the gratification of knowing things would work well and for a long time.. totally worth it. As much as I feel like HVAC would be a great fit for myself I’d be worried about my cost of doing business... damn OCD.

    Thanks for these videos. Working in plant maintenance I am always telling my guys to look for the root cause of the breakdown not just get the machine running. It is good to watch your approach to the problems.

    I feel your pain when you want to start throwing stuff - I work in IT and it is the worst when you go to fix something to find something else is broken that keeps you from fixing the first problem. super frustrating!

    Man !!! I would be wearing a HazMat suit working on the nasty cold top. I am so glad I am out of the restaurant biz. I'd have a stroke if any of my Cold Tops or any of my equipment looked like that. One of my biggest pet peeves is the Top, Front and Sides of the Dish Machine. Most kitchens I ran had equipment on casters for easy moving. Once a week minimal the equipment was pulled, swept behind, wash the floor and disinfect. I would always be smiling when the techs would pull the equipment to work on it and would compliment how clean my kitchens were. I always told my cooks..."Keep it clean everyday and there will never be a build up.". And if the Board of Health stops by... Nothing to hide. Great Job as always. Man, that thing is nasty

      eddiewhaler1 most restaurant managers I worked with only did the minimum. That cold table looked clean compared to what I serviced. The worst were seafood coolers, make one vomit if you opened them up. I got to say Olive Gardens in my area where top notch in keeping things clean. Part of it, they designed equipment for easy maintenance, wash down with hoses, etc. Olive Garden’s equipment seem to be that way.

      @@TOOLMAN4hvac Yes. Seafood Coolers. Really need hosing out. I did take a break from cooking back in 2000-2004 and ran a Wholesale Produce warehouse. I did a few "Fill in" orders to our Olive Garden and absolutely... spotless kitchen. Even under the Pot Sink, Dish Pit... all super clean. I would eat at an Olive Garden just knowing they are clean. I always told my cooks and friends..." If you want to know where to find a Clean Restaurant and Kitchen, ask a Delivery Driver or Repair Tech. They see it all".

      Better question, How many Restaurants/Fast Food Stores do you work on where after you're done, you're REALLY, SERIOUSLY tempted to call the City Health Inspectors and suggest they do a "Random" Health Inspection ASAP?

      What I've learned from working in some of these places is learning to let go of the illusion of perfectly sanitized surfaces in resraurants etc.
      Personally I always did my best to do things right, but in the end, whenever you start at a new job, things are usually not okay. And you know how many customers actually get sick?
      Exactly. I think it is good that we have strict codes etc. as it is better to be stricter than you need to than the other way around, but in the end, I really do think most of these things people get shocked about are actually fine. If you live in an older building, I bet you'd flip if you ever saw one of your waterlines etc from the inside

      Its honestly not that bad, i can promise you that you will not find a single restaurant that is completely spotless. The Important things are taking care of in most places he works at. All large scale food processing is bound to be messy to keep prices as low as possible. Sure they could have someone come in and clean stuff properly every weekend but that would cost way more than its worth.

      I have Tab'ed hundreds of kitchen's !!!! The Family owned are the worse ever, as they instruct the younger (sons, daughters, relatives ) to ClEAN and they know
      nobody is going to Fire them so Cleaning just doesn't get done !!!!!!!!!! I Only eat in Chain-Restaurants , They have a Separate cleaning crew every night( Normally)

    I completely agree with last commentor. You keeping customer up to date is awesome. Can't tell you how many stories I've heard of people not being kept in the loop and all of a sudden they have a huge bill and have no idea why. I really enjoy you taking through your troubleshooting.

    I am quite amazed about the use of wire nuts in these installations.
    The fix with a splice and heatshrink will be a lot better.

    Holy snowball batman! That's crazy the amount of things that was wrong with that system. Its amazing it was running at all and thankfully the compressor reset and you didnt have to change it. Keep up the good work and putting out the awesome videos!

    I like the fact that you show the real world of servicing and not a sugar-coated one. I always hated it when someone would say "I would like an estimate first". I would have to tell them this is what we found and this is what it will cost to fix barring no other problems but if we find additional problems it will cost more. Which in reality you never fully know what it will cost until you have basically fixed all of the problems. I also would not want to eat or even work on a system with food in it like this one was.

    I have had a lot of those kinds of days. Sounds like they have wiring issues in more that one place. Loose connections, low voltage can fry equipment sometimes. Always enjoy your videos, stay safe out there!

    Everyone seems pretty triggered about the dirty prep table, i used to install commercial restaurant equipment and just a heads up shit like this is waaaay more common then anyone would like to believe.

    At 16:51 you probably didn't see it but when you turn that breaker on that unit you were working on there was a arc flash on the breaker just to the right of the one you were turning on there's a loose connection in there somewhere or could be bad bus bar good video as always

      Agreed, it needs another look. First guess is weak/burnt/corroded connection between that breaker and the buss.

    here is a tip,make your own outlet. small connection box for outlet with a wire that has on the end alligator clips. hook one clip to one side of a breaker or fuse and the another to a ground and you have your 115v. i work on lots of roofs with no 115v power supply and this works great instead of long cords.

    8:58 Are WAGO connectors allowed in your area for commercial applications? That's one area where if are they would most certainly come in handy instead of having to resort to wire nuts and having to snip, strip and twist every time a connection goes bad.

    Sounds like my frustration when you use the "convenience" outlet on the Carrier units. They are good for 7.5 amps, IIRC, and use a screw in type fuse, fusetron/fusestat.
    What is the convenience? Can't use anything like a vacuum cleaner, vacuum pump, reclaim unit.

      I mean like, I swear the two food facilities I worked in were both paying off the health inspectors, because there's no way that they could pass inspections with the crap they were doing. OSHA would have had a stroke at the second place.

    I would make sure they addressed the 70 volt issue. Maybe wonky electrics could have something to do with other issues if not this issue.

    I had the chance to do an apprenticeship years ago but at the time I figured I was doing OK working maintenance at the biggest Hotel in our town. Even to this day,I wish I had followed up on that but as it is I still ended up with a really great job working for the schools but still think about that lost opportunity to get into heating and cooling back then.

    For places like that were you changed that fan connection I think glue lined shrink tubes would make sense. Keep water from wicking to the joint.

    I am so amazed at how horrible some of these places look. I've been a Food Service Director for years and I can tell you that I have never worked in a place where having all that buildup would be allowed. Also, if a cooler isn't working you have to remove and/or toss all the food and get it in a place with correct temp ASAP...WTH.

    I don't quite understand why they routed the wire inside , since it gets filled up with condensate water , wouldn't it be better to wire it " on the top " where the fan motor rests ?

    Get yourself some marine grade heat shrink butt connectors. They're a little spendy at $1 each but they're super simple compared to regular butt connectors and heat shrink. The marine grade ones also have a glue built into the heat shrink for a totally waterproof connection.

    There are butt connectors with heat-shrink around it that has a thermal glue that seals the connection when you use a heat source. Most commonly used in automotive and truck wiring. It makes that job much easier and better sealing due to the glue. You can get them at nearly all auto parts locations and on Amazon.

    you said didnt have correct power to plug into there, like 90V? would building you a custom outlet with spade connectors to hook up to different breaker temporarily be a easier way? just cut plug off a cord, strip wires back 18", then heat shrink, then put spade connectors on wire ends, just disconnect wire from breaker before hooking yours up, so you dont overload circuit with your vac pump.
    when I was young I made 1 from a bulb socket, to screw in a outlet end into, to make a bulb, outlet to plug my drop light into, & when I was doing work, I didnt have to drag a long cord to have light at power box, I just tapped into a breaker, & that was when I was a teenager, pushing 40 years ago, doing electrical work for my friends dad that was doing construction work.

      Randy mack that wouldn’t work. It was reading 70 volts because the circuit was missing its neutral. There’s no way to know where the neutral is dropped on that circuit of if it’s tied into others. Could simply be a bad outlet in which case.....still kinda sketchy trying to hook up directly to line voltage.

    In a spot that's tight like that but also is exposed to moisture use liquid electric tape over the connector to seal it. That's what I do when setting up outdoor security cameras.

    Hey, you may see it as a "hack". However, you can use a flared swivel Tee to hook up in the high side for the new pressure switch
