    My dad accidentally did this. We were up at a cabin in the middle of winter and he picked up a water bottle sitting out and it froze instantly. Coolest thing ever.

      It's the same thing that happens to outdoors drinks fridges in summer. Because cold air rushes out of the fridge when you open the door, you have to keep it at a low temperature. But then what happens is if people don't open the door frequently enough, the drinks get supercooled and turns to ice when you pop the cork. :) It was very frequent in Norwegian summer in the 1980s. :)

    I had kept glass bottles filled with water, chilling in the door of my fridge (QLD AU) - then one humid morning I was closing the fridge, and as the door closed I heard the bottle fall forward and (rather mildly) knock the lower shelf opposite where it sat in the door. Well. I opened the fridge again .. and the water had done this 'instant' freeze' thing, creating a hollow vacuum in the centre of the ice, and the bottle itself (no lid on btw) CRACKED into multiple pieces that then slid down/around the outside of the ice. Lots of folks around here keep glass water bottles in the fridge .. not nearly freezing temps you'd think , but some anomally similar to this vid clearly occurred...

    I did this earlier and it made it a slushie instantly. I had it in there for about 2 hours and 15 minutes and I took and out and put it on the counter and walked back to shut the freezer and when I turned around I saw it was freezing. I was confused because it looked frozen but the bottle was squishy then I realized it was a slushie

    Basically the water falls below freezing but since the inside walls of the bottle has no impurities and/or scratches or ridges for ice crystals to form it stays liquid. Only when the bottle is shaken ice can be formed from the liquid hitting the lid edges in the bottle.

    Everyone, I believe there has been a misunderstanding. Many people say "1.5 hours is -a lot- or -that's not instant- Its called instant ice, because it has appeared as liquid (in which it is) and the hitting, or sudden motion cause's a physical change. Where it turns into ice. It is -INSTANT- ice, yes the process may be a bit long. But, once completed it is instant ice.

      That doesn't work, unless you set the temperature of your freezer to -8C or something like that. Too cold and the water will freeze.

      It could, obviously, but at a certain point the kinetic energy put out by the sudden freezing is pushing against gravity, which may be more formidable than the glass walls that some retards are bound to warm with the hands immediately after dropping ice cold water into them.       That's much more than cold enough. I would guess maybe -5C is the goal, but that's only a guess. You can improve the result if you distill the water first, because that removes the minerals that assist in the formation of crystals, making it more difficult for water to freeze and allowing you more freedom to make the freezing happen at will.

    So I'm guessing the science behind hitting the bottle is pressure. More pressure will make the already slow water molecules get packed closer and thus freezing it. However what intrigues me is why it starts at the top rather than the point of impact...

      I think it's also because ice is less dense than water, which usually attributes to ice floating on water instead of sinking. Therefore, it goes to the top and freezes downward.

      All_in_One From my understanding the water is already below 0 degrees Celsius, but it needs energy to arrange its molecules into ice, so that energy needed is provided by the hit. And fun fact I discovered this myself one day by leaving a water bottle in the freezer, and I took it out and started drinking it, and the water started to become ice, similar to the way it’s shown in the video when the water is poured down in the glass.
