    For Bedmi Puri Dough:
    Aata (wheat flour): 2 cups
    Suji (semolina): 1/2 cup
    Ghee/Oil: 2 tbsp
    Ajwain (carom seeds): 1/2 tsp
    Kasuri methi: 2 tsp
    Salt: 1/2 tsp
    Kashmiri lal mirch (optional): 1 tsp
    Haldi (turmeric): 1/4 tsp
    Water: as required
    Oil for frying
    Dry Masala for Stuffing:
    Coriander: 2 tsp
    Black pepper: 1 tsp
    Cumin: 1 tsp
    Fennel seeds: 1 tsp
    Dry red chilli: 3-4
    For Stuffing:
    Split black gram (urad dal): 1/2 cup
    Oil: 1 tbsp
    Hing (asafoetida): 1/4 tsp
    Chopped ginger: 1/2 tbsp
    Chopped green chilli: 1/2 tbsp
    Turmeric: 1 tsp
    Red chilli powder: 1 tsp
    Water: as required
    Salt to taste
    Amchur powder: 1 tsp
    Kasuri methi: 1 tsp
    For Aloo ki Sabji:
    Oil: 3 tbsp
    Bay leaf: 2-3
    Cumin: 1 tsp
    Hing (asafoetida): 1/4 tsp
    Chopped ginger: 1/2 tbsp
    Chopped green chilli: 1/2 tbsp
    Besan (gram flour): 2 tbsp
    Turmeric: 1 tsp
    Kashmiri red chilli powder: 1 tsp
    Coriander powder: 1 tsp
    Tomato: 3 (chopped)
    Salt to taste
    Black salt: 1 tsp
    Boiled potatoes: 3-4
    Hot water: as required
    Stuffing masala: 1/2 tbsp
    Garam masala: 1 tsp
    Kasuri methi: 2 tsp
    Fresh coriander: for garnishing
