Thank you for sharing the recipe. The jaconde is very easy to make, tender and not overly sweet. I didn't use buttercream. Instead I added the purée into bavarian cream, which made it light, equally delicious and less work. ;) This is the 2nd desserts I made from your vdos and they are both scrumptious! Onward!

Ps do you think I could make the purée without the rum? Thanks for the feedback. I did a dummy run and made this. It’s gorgeous. I made some errors. I didn’t make the sponge thin enough and for some reason the gelatine didn’t thicken my jelly enough. I will try again soon. Tastes GORGEOUS!!

I did something similar except it was "chocolate covered strawberry and hazelnut". I subbed out 15 grams of flour for freeze dried strawberries ground to powder in 25 grams of flour. I used 3.5 ounces hazelnut flour and 3.5 ounces almond flour. I seived this together a few times until well combined. I then whipped 5 whole eggs with 6 ounces of powdered sugar until frothy and ribbons formed on the surface. Gently folded in my dry ingredients partially. Then I whipped 1 ounce of sugar and a pinch of salt to 6 egg whites to medium soft peaks. I added it to the whole egg mixture in 3rds and pulled out some of this partially folded egg mixture to mix with 2.5 ounces of melted ghee and folded until it was all combined. I baked it 425°F for 8 minutes. I used frangelico and chocolate liqueur as my soak. A layer of dark chocolate Grenache. Then a German strawberry buttercream. To make this I made strawberry pastry cream. 2 cups strawberry milk. 1 tsp hazelnut syrup, 1/4 cup cornstarch, 2 large egg yolks, and 2/3 cup of sugar. Once it all thickened on the bein Marie I added 1/4 cup powdered freeze dried strawberries and cooked it till it started to thicken. Once the pastry cream cooled I added it to 2 cups of creamed butter 1 spoonful at a time to get a silky smooth fluffy creamy German buttercream. I topped it with a chocolate mirror glaze. I dusted the top with a bit of freeze dried strawberry powder. Topped each portion with a piping of left over frosting and a slice of fresh strawberry and a bit of white pearl edible glitter. Was absolutely amazing.
