This recipe makes the humble begoon shine like a queen. I use brown sugar or ghur instead of white sugar. Makes it a bit sticky. Its an awesome dish that goes very well with both white rice and polao.

One of my aunt made this back in 2007 and i was like what is this ( i never liked eggplant before also allergic) after having it i forgot my allergy and it became my favourite dish. Although she used to burn the eggplant in open fire before cooking which is a bit different from this recipe.
