1:38 that's a "stack bond" (the one that's not offset), it's possible, too, BUT! never as a load bearing wall, but as a decorative "garden wall" or a masonry _veneer_ or house facade (it can look good, if done right)

What is it called when you stagger the joints differently in a stretcher bond, when the next brick up above is not centered over the joint between the two below it?
If english bond as you say is "alternating header and stretcher courses" why does your video graphic show a first course of stretchers?? . Does not make sense. 2:53
