  • You know it, you love it, and you can never get enough of the goodness of this dish. Watch Ranveer Brar work his magic to create Sambhar, specifically from the Udupi region, for you to bring to your home.
    The unmissable accompaniment with idli, medu vada, dosa, or even on its own.
    Sambhar
    Preparation time 10 minutes
    Cooking time 25-30 minutes
    Serve 2-4
    Ingredients
    For Cooking Dal
    2 cups Toor dal, तूर दाल
    4 cups Water, पानी
    Salt to taste, नमक स्वादअनुसार
    ½ tsp Turmeric powder, हल्दी पाउडर
    A pinch of red chilli powder, लाल मिर्च पाउडर
    For Sambar Masala
    2-3 tbsp Ghee, घी
    2-3 heaped tbsp Coriander seeds, धनिया के बीज
    1 tbsp Cumin seeds, जीरा
    1 ½ tbsp Urad dal, उड़द की दाल
    1 tbsp Chana dal, चना दाल
    4-5 Dry red chilies, सूखी लाल मिर्च
    ¼ cup Grated coconut, (white part) नारियल कसा हुआ
    Salt to taste, नमक स्वादअनुसार
    ¼ tsp Asafoetida, हींग
    2-3 tbsp Water, पानी
    For Cooking Vegetables
    Water as required, पानी
    Salt to taste, नमक स्वादअनुसार
    3 no. Drumsticks, cut into diced, सहजन
    5-6 no. small Eggplants, cut into middle, बैंगन
    250 gm Pumpkin, peeled & cut into diced, कद्दू
    For Sambar
    Cooked Dal, पकी हुई दाल
    6-7 tbsp heaped Prepared Sambar Masala, तैयार किया हुआ सांबर मसाला
    Boiled vegetables, उबली हुई सब्जियां
    Remaining water/ water, पानी
    2 tbsp Tamarind pulp, इमली का गूदा
    2-3 tbsp Jaggery, गुड़
    Prepared Tempering, तैयार किया हुआ तड़का
    For Tempering
    1 tbsp Oil, तेल
    1-2 tsp Ghee, घी
    1 tsp small Mustard seeds, बारीक राई
    5-6 no. Button chilies, बटन मिर्च
    2 sprig Curry leaves, करी पत्ता
    For Garnish
    Prepared Tempering, तैयार किया हुआ तड़का
    Process
    For Cooking Dal
    In a handi or sauce pot, add toor dal, water, salt to taste, turmeric powder, degi red chilli powder and mix it well.
    Cover it with a lid and cook it for 20-25 minutes on medium flame.
    Keep it aside for further use.
    For Sambhar Masala
    In a pan, heat ghee, add coriander seeds, cumin seeds, urad dal, chana dal and saute it for 2-3 minutes on medium flame or until golden in colour, add dry red chillies and toast it well.
    Transfer it to a bowl, add grated coconut, salt to taste, asafoetida and water.
    Transfer it into a mixer grinder jar and grind it into a smooth paste.
    Keep it aside for further use.
    For Cooking Vegetables
    In a handi or sauce pot, add water, salt to taste, drumstick, pumpkin, eggplants, cover it with a lid and cook it for 7-8 minutes on medium flame or until 70-80% cooked..
    Keep it aside for further use.
    For Sambhar
    In a handi or sauce pot, add cooked dal, prepared sambhar masala and give it a quick boil.
    Add cooked vegetables along with remaining water and mix it well. Allow it to cook for a while.
    Add tamarind pulp, jaggery and simmer it for 4-5 minutes on medium flame.
    Pour the prepared tempering and mix it well.
    Transfer it to a serving bowl or plate and garnish it with prepared tempering.
    Serve hot with rice.
    For Tempering
    In a pan, heat oil, ghee, add mustard seeds and let it splutter.
    Add button chilies, curry leaves and toss it well.
    Keep it aside for further use.
