This is EXACTLY how my family have been making Boxing Day bubble for generations, bubble, fried eggs and left over ham with piccalilli is my favourite family tradition!
This is not a traditional method, bubble and squeak is primarily mashed potatoes and cabbage, in fact whatever Jamie Oliver cooked in the above video, I would not even call it bubble and squeak.

Whilst it's true this recipe isn't 'bog-standard traditional', it still adheres to the basic concept of using leftovers, which of course is where the idea of B&S comes from. Varied ingredients makes it more interesting. If all you're going to do is fry up cabbage and spuds, it would a bit of a waste of Jamie's talent tbh. After all, any old fool can make plain bubble.

Slightly different since it's usually leftovers from roast dinners so roast pork or lamb, spinach, leftover roast potatoes etc but we just chop the lot into bite size cubes and cover with beaten eggs and bake till golden. My hubby just got me one of your books I didn't have yet for Christmas. The 30 minute meals. My favourite is Jamie at home. Someone borrowed my Christmas one and I can't remember who 😭. Thanks Jamie, bubble & squeak is the best. I steam/boil extra vegetables so have enough for this, and mostly with cabbage in it- also hence the 'squeak' name. We had it many times with my English grandparents. Let it settle in the buttery frypan for a crispy crust, then mix in softly, and repeat. so crisp is mixed with the soft, then let it settle again for that final turned over yummy crispy bottom.
That was my favorate dish in the university canteen during my university yrs in the UK because the canteen ladies used to really pile it on my plate. I had forgotten it all these yrs but tommorow I am going to try to cook it at home.

Jamie is great at the the simple rustic Just like we cook at home. Leftovers are gold. So much you can do with them. After all, how many times have we cooked for a family of 5 and only two sons shoed up. LOL For the bubble and squeak, I like to use potato's, carrots and beets. Even toss in a sweet potato. It's lovely. Its crispy on the outside and smooth and moist on the inside. As as he says, you can use just about anything as long as you have potatoes.
I made some yesterday with crushed new potatoes sweetheart cabbage a full bulb of garlic yes a full bulb fried sea salt black pepper butter and a good splash of worstershire sauce was bloody beautiful
A runny fried egg on top is mandatory and HP sauce/brown sauce squirted on top of my bubble and squeak and fried egg as well. It’s perfect for using up the leftovers after a Sunday roast the next day.
Piccalilli is an event on its own. Enjoyed and respected this video. The marriage with bubbles and squeak was curious. Suppose as a deposit of a pauper, elevated may not resonate with this dish, young man. Cabbage, and potatoes, amigo; no complications.

Bubble and Squeak cannot get more ol school than that. Whatever cooked meats and veggies leftovers you have, but you got to watch it like a hawk, for it can turn on you and burn. The piccalilli was a nice touch.

Trying to learn about this. made for sorts time last night. Just used cabbage and mashed p’s. Didn’t know about turning and mashing and combining so bottom was overdone. Finished under broiler - not long enough. Tasted good but, eager to do again with Jaime’s technique.
I love Bubble and Squeak at ANY time, so I cook some peeled potatoes and some cabbage or sprouts. Then, once they're cooked and have gone cold, I heat olive oil and butter in a fry pan and put the broken up potatoes and chopped up cabbage into the pan and then I just do what Jamie does in the video. I take a masher and mash the veggies and cook them for a LONG TIME. You really have to do that part, so you get lots of yummy crispy bits 😋 😍 👌 😜 Ooh, I'm going to make some today. Thank you Jamie, you're absolutely Pukka mate! P.S. My method is not the same as using cold roast potatoes, but it's great for when you want Bubble and Squeak at ANY time. Edit: And you do need to season the mixture well because the pots haven't been roasted.
In NZ we would do this the morning after a roast chicken and fry all the potatoes, Kumar a, pumpkin and chicken in the pan but add a onion and a lot of butter/salt. A little more rustic but amazing
As a child this was my nemesis. I, like very few people do not like potatoes 😩. I always made sure my mother had no greens left from Sunday’s lunch to make it on Monday.
Wat is it about potatoes u don't like? There are sooo many ways the have it. A humble potato on its own doesn't have much flavor but u can cook to absorb flavor. U can replace with squash, pumpkin and kumera(sweet potato) even with root veg. There no rules with bubble and squeak.
I love the passion and the rustic versions of Jamie's meals.

Absolutely love good old Bubble & Squeak! You can put ANY leftover veg in it, and serve it with so many different things. Great with cold roast meats.
