6:52 & 11:08 "The pirate of the roads" and "that imbecile, who put wheels on his boat" are both references to Grant Danasty; the forgotten third party member of Castlevania III. St. Germain is a supporting character in Curse of Darkness, who gives Hector cryptic advice throughout his journey.
Yeah, the *whichever writer/director/whoever it is that made this series* did not care for Grant, and those lines are mocking him for the reasons he wasn't put in the series as an ally to Trevor, Sypha and Alucard. Thinking a Pirate in this setting is just out of place and dumb. (But Godbrand as a Viking Vampire is ok) We'll get a sort of fill in replacement "not Grant but fills his spot" character later. Still think it's unfair that Grant keeps getting shafted out of Castlevania things aside from the original game and Symphony of the Night, but at least he got that one.
I mean he apparently does look like the least distinguished most nothing character in his art. The idea probably came down to "how do we make this guy look and seem cool compared to the others while not straying too far from the source" and they gave up.
1. Alucard slowly losing his mind being all alone really puts into perspective what Dracula was dealing with and why he kept himself busy with science and magic. Also, being half-vampire, Alucard *can* drink blood to become stronger, but he doesn't rely on it for sustenance. If he did actively drink blood tho, he'd probably be as strong as Dracula with age *cough* Symphony of the Night *cough* 2. Just gonna put it out there, Saint Germain is a VERY interesting character
Fun fact: The "pirate of the road" line is a reference to the fourth character in Castlevania 3, Grant Danasty. He and Alucard were mutually exclusive, so you couldn't recruit both in a single playthrough. It was always considered strange that a pirate-esque character was in the region as Walachia is land-locked.
Trivia: in another example of just how stacked this voice cast is, St German is voiced by Bill Nighy (not to be confused with Bill Nye). Also, the Bishop of Greshit (who was killed by demons and then turned the river holy) is voiced by Matt Frewer who has a list of acting credits as long as your arm, including both Star Trek and Supernatural just for starters. Also Max Headroom, for those of a certain age.

The only possible explanation I can think of is that since the moves, maybe Dracula popped over to South America (a place he couldn't have known even existed) and picked up some tomatoes and later planted some seeds in his castle's cursed garden.

So yeah a month later Alucard is slowly going insane, Trevor and Sypha are together now and have been riding along dealing with the chaos in Dracula’s wake with one of the the night creatures they killed probably a creation of Issac’s and found themselves in trouble, Carmilla returns to her coven and wants to potentially murder a quarter of Europe as things have gone to hell with Dracula’s death with Hector her prisoner. And yes Trevor did kill a werewolf with brute strength alone. Though now he and Sypha have now found themselves in possibly a new problem with the mad monistary monks. As for Saint Germain, well he was in the Castlevania series and assisted Hector but he also existed in real life as a Count, adventurer, philosopher, and alchemist. But he wouldn’t be alive until the 1700’s, there are a large web of stories that is difficult to tell fact from fiction even if mostly fictional with some claims to be 500 years old and possibly some proof that he is actually the son of a Romanian Prince whose death was faked at infancy to keep him safe from persecution of the Royal dynasty lining up with his historic birth year. What is agreed was that he was a brilliantly yet eccentric and interesting man and that lines up within the show too.
so i'm personally not a big fan of season 3. better opinion now than back when i first watched it but i still think it's pretty ehh. granted it's only because of a few things that were just kinda unnecessary and had now reason to be there at all, but i do hope you two enjoy it since there are some really cool things in this as well that helped prevent it from just feeling like a sidequest.

Out of the three of Carmila's Sisterhood, keep a close eye on the red head in the white cloak. She plays a huge part in the series with Hector.
